Hatch Green Chile Quiche with Sausage and Cheese
Here’s a simply delicious quiche recipe. Roasted Hatch green chiles, sausage, spice and cheddar cheese make this quiche one of the most irresistible dishes you’ll ever taste. Perfect for dinner, lunch, brunch or breakfast, this tasty quiche satisfies even the heartiest appetites.
Quiche is one of the most versatile recipes you will ever make. Once you’ve learned the basics of how to make a quiche, the variations and flavor combinations are limited only by your tastes and creativity.
In this video I show you how to make a quiche step by step, from start to finish. In this quiche recipe we use a frozen pie crust and a few other simple ingredients.

Hillbilly Jilly Hatch Green Chile Quiche with Sausage and Cheese
Ingredients
● 1/8 teaspoon nutmeg
● 1/2 teaspoon salt
● 1/2 teaspoon black pepper
● 1 cup grated cheddar cheese
● 1/2 cup chopped onion – sautéed
● 1/4 cup Hatch green chiles chopped (one 4 oz. can)
● 3 eggs
● 1/2 pound ground sausage – cooked
● 9-inch deep dish pie crust
Directions
1. Preheat oven to 350 degrees
2. Cook sausage and sauté onion
3. Add sausage first, then cheese to pie crust
4. Beat eggs just enough to blend yolks and whites
5. Add remaining ingredients to egg mixture and mix well
6. Pour egg mixture into pie crust making sure to spread evenly
7. Bake in oven at 350 degrees for one hour

We Are The World 25 For Haiti - Official Video
Recorded on February 1st, 2010, in the same studio as the original 25 years earlier (Henson Recording Studios, formerly A&M Recording Studios) We Are The World 25 For Haiti, in which Quincy Jones and Lionel Richie serve as executive producers and producers, was created in collaboration with executive producers Wyclef Jean, Randy Phillips and Peter Tortorici; producers Humberto Gattica and RedOne; and co-producers Rickey Minor, Mervyn Warren and Patti Austin to benefit the Haitian earthquake relief efforts and the rebuilding of Haiti.
Academy Award-winning writer-director Paul Haggis (Crash, Million Dollar Baby), whose own personal efforts as well as those of Artists for Peace and Justice have already saved countless lives in Haiti, filmed the private recording session to create the accompanying video and behind-the-scenes production, and serves as Film Director and as an Executive Producer with Jones, Richie, Jean, Phillips and Tortorici.
The 25th Anniversary recording features over 80 artists and performers. The recording of We Are The World 25 For Haiti embodied the same enthusiasm, sense of purpose and generosity as the original recording 25 years ago. Every one of the artists who participated, regardless of genre or generation, walked into the room with their hearts and souls completely open to coming together to help the people of Haiti.
Beef Chile Colorado
2 tbsp oil
2 lb chuck pot roast
2 tbsp all-purpose flour
4 Roma tomatoes
1/2 onion
2 garlic cloves
10 chili Arbol chili pods (optional)
guajillo chilies 2 oz bag
2 tsp cumin
1 tsp salt
1 tsp pepper
3 cups of water for boiling

This recipe calls for 3 cups of water. You will have extra sauce left over. Do not discard. Save it. I put it in a ziplock bag and freeze it for another time. It is an excellent enchilada sauce. You can also pour it over 4 cooked chicken legs.
If you don't want leftover sauce, only use two cups of water and cut your onion and tomato into smaller pieces. Using 2 cups of water will make this recipe more spicy. Maybe only 1 tsp of cumin.

How to Roast Hatch Green Chiles in Oven and Freeze Green Chiles
Here is an easy guide for roasting hatch green chiles at home in your oven. Then we show how to freeze roasted green chiles in small portions for later use in our Hatch Green Chile recipes.
The Hatch Chile is grown in the Hatch Valley, in and around Hatch, New Mexico. The Hatch Chile is New Mexico's signature crop both for the economy and culture. The chile pepper is New Mexico's state vegetable. New Mexico's official state question is Red or Green?
The Anaheim pepper is a milder variety of the 'New Mexico No. 9 pepper'. The name 'Anaheim' comes from Emilio Ortega - a farmer who brought the seeds from New Mexico to Anaheim, California about 1894.
Hillbilly Jilly Oven Roasted Hatch Green Chiles and How to Freeze Green Chiles
Ingredients / utensils
● Any number of whole Hatch Green Chiles – you can even do
one or two at a time
● 21 x 15 standard cookie sheet
● A sturdy plastic bag – use the veggie bag from the grocery
store or a gallon size Ziploc
● Tongs for turning green peppers – not absolutely necessary but
helpful
● Sandwich size Ziploc bags for freezing – gallon sized Ziplock
for double bag
Directions
1. Place Hatch Green Chile peppers on cookie sheet under broiler
on high
2. Broil until skins bubble and char – keep a close eye on them, it
doesn’t take long
3. Remove from oven, turn green peppers with tongs, replace into
oven and broil until skin bubbled and charred
4. Remove from oven and place immediately in plastic bag – seal
with a twist or zip and let steam for about 10 minutes.
5. Carefully remove one roasted green chile at a time, peel and
deseed in kitchen sink while under a trickle of running of
running water.
6. Pack serving / recipe sized portions of roasted Hatch Green
Chiles into sandwich bags.
7. Roll air out of bags, seal and freeze
Note: Wear gloves while handling peppers and never touch your face!
If you have a number of green chiles for freezing, place them in one gallon size bag for better containment and protection.
When you need your Hatch green chiles, remove from freezer, allow to thaw for 15 minutes or so. Now remove them from bag and slice off needed amount. Replace any remaining green chiles in freezer.
