How To make Navrathna Kurma
100 g Paneer (or cottage cheese)
2 c Mixed boiled vegetables
3 Tomatoes
2 Onions
1 ts Ginger and garlic paste
1 1/2 ts Chilli powder
1/2 ts Turmeric powder
2 ts Coriander powder
1 ts Garam Masala
1 c Milk
3 ts Fresh cream
3 ts Ghee
To taste salt Ghee for deep frying 1. Grate the onions
2. Put the tomatoes in hot water . After 10 minutes take off the skin and
chop 3. Cut the paneer into small pieces and deep fry in ghee.
4. Heat oil in a vessel and fry the onions for a few minutes
5. Add the ginger and garlic paste and fry for 1/2 minute.
6. Add the chopped tomatoes, turmeric powder, coriander powder and chilli
powder, Garam Masala and salt. Fry for at-least 3 to 4 minutes. 7. Add the boiled vegetables, milk, cream and fried paneer pieces
8. Cook for a few minutes

Navratan Korma Recipe:
Oil - 2 tbsp
Ghee - 1 tbsp
Cinnamon Stick - 1 no
Green Cardamom - 3 nos
Cloves - 3 nos
Cumin Seeds - 1 tsp
Green Chilli (slit) - 2 nos
Onions (finely sliced) - 3 nos
Ginger Garlic Paste - 1 tbsp
Red Chilli Powder - 2 tsp
Turmeric Powder - ¼ tsp
Curd (whisked) - ½ Cup
Cashew Paste - ¼ Cup
Carrots (diced) - ½ Cup
Beans (chopped) - ½ Cup
Potatoes (diced) - ½ Cup
Peas - ¼ Cup
Salt - 2 tsp
Water - 1 ½ Cup
Cashew Nuts - ½ Cup
Raisins - ¼ Cup
Ghee - 2 tbsp
Pineapple (diced) - ¾ Cup
Pomegranate - ¼ Cup
Coriander Leaves - For Garnish
Cooking Instructions:
1. Heat oil and ghee in a pan, add the dry spices and let it crackle.
2. Add the onions and saute till it turns golden brown.
3. Add the ginger garlic paste and cook for a few seconds.
4. Add the powders and cook them for one minute..
5. Add the vegetables except the green peas, mix them well. Add water and let the vegetables. Cover and cook for 10 minutes.
6. Whisk curd in a bowl, add it to the vegetable mixture and mix it well.
7. Add the pureheart cashew nut paste, mix it well. Bring it to a soft boil.
8. Cover and cook it on a Medium flame, stirring occasionally till the vegetables are cooked.
9. Add the green peas, let it cook for a minute. Turn off the flame
10. In another pan, heat ghee, add cashew nuts, diced pineapple and raisins and toss them for a few seconds.Add it into the korma.
11. Season the korma. Mix it well..
12. Garnish it with pomegranate and coriander leaves. Serve it hot with rice.
Cooking Tips:
1. Add extra water depending on your preference of the thickness of the gravy.

Ingredients:
3 Onions
2 Tomatoes
7-8 Garlic cloves
1/2 inch Ginger
1/2 tsp Cumin Seeds
2 tbsp Oil
1 tbsp Raisins
1 tbsp Cashews
1 tbsp Coriander Seeds
1 tbsp Mix Masala
1 tsp Kitchen King Masala
1 tbsp Butter
1 Sweet Lime, chopped
1 Cup Mix Vegetables (French Beans, Carrots, Flower, Capsicum)
Coriander Leaves
Grated Paneer
Water
Salt to taste
Method:
- For the gravy make the masala paste by using onions, tomatoes, ginger, garlic, raisins, cashews & coriander seeds. Keep the masala paste ready.
- In a pan heat some oil. Add cumin seeds and let them splutter.
- Then add the masala paste and saute for 10 minutes.
- Add kitchen king masala, mix masala, cashews, raisins & butter. Mix well.
- Add half cooked vegetables and salt. Mix everything well.
- Add some water and again mix well.
- Add sweet lime pieces, mix well.
- Cover it with a lid and let the gravy simmer for 20 minutes.
- Add butter and coriander leaves. Switch off the flame.
- Garnish the Korma with sweet lime pieces and grated paneer.
- Enjoy Navratan Korma with Roti / Naan.

1/3 Cup Potato Cubes
1/4 Cup Carrot cubes
10 Cauliflower Florets
1/4 cup frozen peas
1/4 Cup Sweet Corn
4 French beans
50gms Paneer
10-12 Apple cubes
10-12 Pineapple Cubes
2 tbsp cashews
Salt
1/2 Cup Fried Onion
1/3 cup Cashews (for gravy)
3 Green chillies
1 tsp Ginger garlic paste
1/2 inch cinnamon
2 cloves
2 Cardamom
2 tbsp Ghee
2 tsp Oil

1/2 Bay leaf
