How To make Mushroom Crust Quiche(Pjs)
1/2 lb Mushrooms, coarsely chopped
5 tb Butter or Margarine
1/2 c Finely Crushed Saltine
Crackers 3/4 c Chopped Green Onion
2 c (8 oz) Shredded Jack or
Swiss Cheese 1 c Small or Large Curd Cottage
Cheese 3 Eggs
1/4 ts Each, Cayenne and Paprika
In a frying pan over medium heat, saute the mushrooms in 3 tablespoons of butter until limp. Stir in the crushed crackers, then turn into a well-greased 9-inch pie pan. Press mushroom mixture evenly over pan bottom and up the sides. Melt remaining 2 tablespoons utter, add onions, and saute until limp. Spread onions over crust; sprinkle evenly with the shredded cheese. In a blender, whirl the cottage cheese, eggs, and cayenne until smooth. Pour into crust and sprinkle with paprika. Bake in a 350 degree oven until a knife inserted in the center comes out clean, about 20 to 25 minutes. Let stand 10 to 15 minutes before cutting. Serve this savory quiche with a fresh spinach or mixed green salad.

This is a vegan shepherd’s pie that might actually be better than the real this. It’s a bold statement but it’s true! Instead of using ground beef Jeremy uses a mixture of mushrooms, walnuts, cauliflower and spices. Sounds crazy? You’ll have to watch the video to see just what we’re talking about! This Vegan Shepherd Pie or cottage pie is a hearty casserole topped with crispy mashed potatoes that take it to the next level. A comforting and crazy plant-based whole food dinner that can also double as a main for Thanksgiving, Christmas, or Easter.

Quiche with Golden Potato Crust
This is a basic recipe that is easy to adjust. Add your favorite vegetables (try blanched broccoli, shredded carrots, or asparagus). Add some grilled chicken to give it even more flavor and an extra protein boost! Easy to cook in a cast iron skillet, pie plate, or casserole dish. Good for Breakfast, Lunch, Dinner, or Brunch. INGREDIENTS:
1 large Golden Potato (Yukon Gold) - thinly sliced
1/2 Onion - diced
1/2 Green Bell Pepper - diced
1/4-1/2 Red Bell Pepper - diced
7-8 Whole Eggs
Approximately 1/4 cup of water
Olive Oil for potatoes and pan
Salt for potatoes and veggie saute
Black Pepper - per your taste
Granulated Garlic - per your taste
Italian Seasoning Blend - per your taste
Crushed Red PepperFflakes - per your taste
Onion powder - 1/4 tsp or to taste
SUBSTITUTIONS:
Egg whites only - may need to reduce cooking time
Ener G egg Replacer (tastes better the next day)
