How To make Mushroom Bacon Party Pate
2 lb Mushrooms (fresh),
-chopped very fine 1/2 lb Bacon (or more,
-to taste) 2/3 c Onion, chopped
-very fine 2/3 c Celery, chopped
-very fine 4 Eggs
8 oz Cream cheese at
-room temperature 1/2 c Parsley, chopped
-very fine 2 c Dry bread crumbs
1 ts Salt
1 ts Rosemary, dried
1 ts Oregano, dried
1/4 ts Black pepper, ground
Fry the bacon and crumble it as fine as possible. Reserve some of the grease. Chop the mushrooms, onion, celery and parsley as fine as possible. A food processor works best, but you can do it by hand if need be. Saute the onion and celery in the bacon grease until soft, then remove from the grease and drain. Meanwhile, beat the cream cheese slightly, and then beat in the eggs. Add all other ingredients to the eggs/cheese mixture. Mix thoroughly. Grease a large loaf pan or two small, line with foil, and then grease the foil. Pat the mixture into the loaf pan and cover loosely with foil. Bake for 1 1/2 hours at 400 degrees F. Let cool completely before serving. This pate is actually best when refrigerated before serving. Serve with crackers, or with bread cut into shapes with cookie cutters. To make this a more elegant buffet dish, garnish the top with a thin layer of aspic. NOTES: * This is heavenly stuff for a buffet, and for those people who love to munch, but hate liver pate. We found it in a magazine some years ago. The magazine has long since been forgotten, but this I know by heart! There’s no better spread, over slices of baguette or your favourite cracker. Silky and smooth, it’s the perfect appetizer everyone loves. Ideal for dinner parties, cocktail parties, and the festive seasons. Pâté can also make a great food gift, placed in little glass containers.
Make sure your butcher has cleaned the livers. If not, pull out some of the membranes, and look out for any gallbladders, been green in colour, they are easy to spot. Don’t miss any as they are bitter and will ruin the taste.
A good pâté should be smooth, without any lumps and easy to spread. This recipe takes it another step for extra smooth. I use a little bacon in mine, for that hint of smokiness and smoother flavour.
FYI, Pâté also has health benefits, as livers contain vitamin B12 which is commonly deficient, particularly in older people.

Delicious Vegan Mushroom Paté - Easy to Prepare
16 ounces white mushrooms, cleaned and sliced
1 Onion (of your choice. I prefer red but white is fine too)
1 cup bread crumbs
4 garlic cloves, minced
3 tablespoon fresh basil leaves
4 tbsp Olive Oil
1 teaspoon salt, or to taste
Juice of 1 Lemon
Black pepper, to taste
Instructions
Spray pan with olive oil (about 1 tbsp)
Add onions and cook until they are transparent about 5-7 minutes.
Add mushrooms and cook them until all water has dissolved and the mushrooms are tender and cooked. about 7-15 minutes. The key is to make sure there is no water left in the pan.
Remove the mushrooms and onions from the skillet and let cool for a bit.
To the cooked mushrooms and onions, add 1 tbsp of olive oil as well as the garlic, basil, and breadcrumbs. Some people also add a bit of balsamic vinegar but that is optional.
Transfer the mushroom mixture to a food processor or a vitamix. Process everything while slowly adding the rest of the olive oil.
Blend the mixture until it's as smooth as you like it — anywhere from coarse and chunky, to a very smooth paste.
Season the pâté with salt and pepper.
Serve immediately with veggies, bread and/or crackers, or chill for later. Garnish with fresh herbs, if desired.
**To make this dish lacto-ovo vegetarian you can add 1/4 cup of plain yogurt or sour cream to the mushroom mixture before blending.
