2 lb Fresh mushrooms 1/4 lb Butter 1 pk Garlic or Italian "Good -Seasons" mix Saute cleaned mushrooms in butter for 5 minutes. Sprinke with the package of "Good Seasons" dressing mix. Simmer covered, do not boil, for 1 1/2 hrs. Serve with toothpicks. They go fast.

Mushroom and Cheese Pops Recipe: To boil: Potatoes (diced) - 5 nos Water - For Boiling Salt - 2 tsp
Other Ingredients: Oil - 2 tbsp Garlic (Finely Chopped) - 2 tbsp Onion (Finely Chopped) - 2 nos Mushroom (chopped) - 400 g (2 packets) Salt - 2 tsp Black Pepper powder - ½ tsp Oregano Seasoning - 1 tsp Mozzarella Cheese (grated) - ¾ Cup
To Coat and Fry: Maida - ½ Cup Water - ¾ Cup Salt - 1 pinch Black Pepper Powder - 1 pinch Panko Crumbs - 2 Cups
Cooking Instructions:
1. Bring water to boil in a pot. Add Salt to it 2. Add the diced potatoes and boil it till it becomes soft and mashy 3. Strain the potatoes and mash them while they are still hot and keep it aside 4. Heat a pan, add oil 5. Add chopped garlic and onion and saute till the onion turns translucent 6. Add the chopped mushrooms, salt and pepper and saute till the mushrooms are completely cooked and the mixture is dry 7. Add salt, oregano seasoning, black pepper powder and saute on a high flame and take it out. Let the mixture cold down 8. Add the mushroom mixture and grated cheese to the mashed potatoes and mix well till they combine evenly. 9. Shape them into even sized spheres. 10. Prepare a thick batter using maida, water,salt and pepper. In another bowl add bread crumbs. 11. Coat the shaped mixture in the maida batter first and then in the bread crumbs 12. Heat oil in a pan, make sure it is hot. 13. Fry the crumbed pops in hot oil till golden brown 14. Serve it hot with a dip of your choice

The above recipe is a first in the appetizer series . It's a simple modern thai one bite dish made using easily available ingredients and is plated in soup spoons adding an elegant and refined touch .
The recipe has 3 components : 1. The caramelized mushroom 2. The chilli peanut crumble 3. The curried aioli
The mushrooms need to be marinated in a refrigerator for the flavour to set in .
The chilli peanut crumb can be made ahead and cling wrapped.
An aioli is basically fragrant mayonnaise . Here we flavour it with thai red curry paste and kaffir lime leaves to give it flavour depth and kick. This too can be made ahead and cling wrapped and refrigerated for later use.
When cooking the mushrooms in quantity cook in batches as crowded mushrooms release water and they lose their flavour.
Finally we use kaffir lime leaf slivers to garnish , giving it a strong contrasting character.
