How To make Mountain High Herb Baked Eggs
1/4 lb Ham, flaked
8 lg Eggs, fresh
2 ts Dijon mustard
1/2 c Sour cream
2 ts Fresh chives, chopped
2 ts Fresh parsley, chopped
3/4 c Shredded sharp Cheddar
- cheese Preheat oven to 375 degrees. Grease 4 1-cup ramekins. Divide flaked ham between ramekins. Whisk together eggs, mustard and sour cream. Stir in herbs and top with shredded cheese. Herb Time! Lemon Verbena Dessert Bars; Refreshing & Delicious!
I have a lot of herbs that need to be used in some way and so I thought I would make a new series dedicated to making wonderful food and treats with the bounty of my herb garden. First up is this wonderful shortbread custardy type dessert that features lemon verbena; an herb I grew just this year. It was truly addictive with its lemony notes and refreshing sweetness that balances the lemon perfectly. This was a great first Herb Time recipe and I know you'll love it too!
What you'll need:
Crust:
1 c All-Purpose Flour
1/2 c Butter
1/2 c Powdered Sugar
4 leaves of Lemon Verbena or Lemon Balm, chopped
Combine all the above ingredients and spread into the bottom of a greased pan. Bake at 325 degrees for about 25 minutes or until edges are lightly browned.
Filling:
2 eggs, beaten
2 T Lemon Juice
Grated rind of 1 Lemon
1 c Granulated Sugar
2 T All-Purpose Flour
1/2 tsp Baking Powder
Mix lemon rind, sugar, flour, and baking powder. Gradually add egg and lemon juice while mixing together. Pour mixture over crust and bake at 325 degrees for 20-25 minutes.
