Chocolate-Covered Cherry Cookies | Baking Christmas cookies with my mom!
While these fudgy cookies are not the traditional cookie for many, they’re definitely unique! The chocolate dough on the bottom and chocolate ganache on top trap the cherry in the center of the cookie, creating a gooey, super-flavorful bite. There’s nothing more Christmas than these cookies!

INGREDIENTS
- 1/2 cup unsalted butter
- 1 cup white granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder, sifted
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 10-oz jar Maraschino cherries
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup heavy cream
INSTRUCTIONS
- Preheat the oven to 350°F.
- In a large bowl, cream the butter and sugar. The mixture will be light and fluffy and well combined. Mix in the egg and vanilla extract until it is smooth.
- To the wet ingredients, slowly add the flour, cocoa, baking powder, baking soda, and salt. Beat until combined. The dough will be dry and almost crumbly.
- Using a cookie scoop, make 1-inch balls out of the dough, roll them in sanding or white granulated sugar, and place them on a parchment-lined cookie sheet.
- Drain one 10-ounce jar of Maraschino cherries. Reserve the juice and set it aside for later. Pat cherries until very dry. If cherries are extra-large, cut them in half. Press a cherry into the center of each dough ball. Do not be afraid to press firmly.
- Place in the preheated 350°F oven and bake until the cookies are set, 10-12 minutes. Once the cookies are baked, remove them from the oven. Allow the cookies to cool for 5 minutes and then frost while warm.
- While the cookies are baking, heat the heavy cream until it begins to simmer. Once it is simmering, pour the cream over the chocolate chips. Allow the cream to melt the chocolate for 3 to 5 minutes. Once the chocolate is melting, slowly stir the mixture until it is smooth. Once the chocolate is smooth, add 1 tbsp of the reserved cherry juice.
- Once the ganache has cooled slightly and thickened, spoon 1 to 2 teaspoons of frosting onto the top of each baked warm cookie, covering the cherry. Sprinkle with sugar or decoration, if desired.

Greetings! It's cookie time! It is also December 1st as I post this video. 24 days until Christmas. It really is time to decide what type of treats you are going to make for friends family and co workers or whoever you want to bless with the Holiday spirit!
These cookies start with a sugar cookie mix and this is what makes them so easy. Mixes may be scoffed at by some, but to me they are affordable premeasured ingredients that will get you a head start on a really delicious recipe and these chocolate cherry pecan jumbles are just that! Delicious does not really begin to describe these tasty little nuggets of chocolate cherry goodness.
These are sure to disappear quickly once you make them. The recipe makes approximately 4 dozen cookies, plenty to share or take to a cookie exchange! These go together quickly and you can have lots of cookies in about an hours time.

No Bake Cherry Delight
This is an old recipe that mom got from a lady who she's known for years. She recently celebrated her 91st birthday I believe, so this recipe goes way back. It is a very easy dessert to throw together and your family will love it. Best of all, you can change the topping up to whatever kind of fruit you'd like. It is another simple and delicious recipe from mom. Let me know what you think about this version and y'all enjoy.

Ingredients:
Crust:
1 1/2 cup crushed graham cracker crumbs
1 1/4 stick of butter melted
Combine these and push into the bottom of a prepared 9x13 baking dish
Bake for 10 minutes at 350°F
Remove from oven and let cool before placing filling.
Filling:
8 ounces Cream Cheese room temperature
1/2 cup sugar
8 ounces Cool Whip 1 container (mom made whipped cream*)
1 teaspoon vanilla extract
2 cans cherry pie filling
Mix ingredients together (minus pie filling) with a hand mixer till well incorporated.
Spread evenly over the graham cracker crumbs.
Now spread the cherry pie filling over the cream cheese filling.
Refrigerate 2-3 hours (or overnight) before serving.
*Whipped Cream:
16 ounces heavy whipping cream
Blend with hand mixer or stand mixer till heavy peaks appear

Crispix Mix Recipe:
6 cups Cheezits
6 cups Crispix cereal
6 cups Quaker Oatmeal Squares cereal OR pretzels
2 sticks of butter
3 1/2 T worcestershire sauce
3 1/2 t seasoned salt
1/2 t garlic powder
Combine cereal and cheezits in large pan. Melt butter and stir in spices. Add to cereal mixture and mix well. Bake at 250 degrees for 1 hour, stirring well every 15 minutes.
Sponge Candy Recipe:
1 C white sugar
1C dark Karo syrup
1T white vinegar
1T baking soda
1T vanilla
Chocolate almond bark
In large heavy pan, combine sugar and karo syrup and cook until candy thermometer reaches 300 degrees, stirring often. Dissolve baking soda in vanilla. Stir into candy mixture, then add vinegar. Stir lightly.
Pour onto a silpat lined baking tray quickly. DO NOT SPREAD.
Let harden and break into chunks. Dip in melted almond bark. Let harden and bag up.
Keto Chocolate Chip Cookies
1 1/2 cups almond flour
1/2 cup salted butter
3/4 cup erythritol
1 tsp vanilla
1 egg
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp xanthan gum
3/4 cup Lily's chocolate chips
Preheat oven to 355F. Beat softened butter with sweetener. Add vanilla and egg, mix on low just til combined. Add dry ingredients then chocolate chips. Roll into balls and place on baking tray, flattening slightly. Bake for 10 mins or until lightly browned on bottom. Do not overbake.

Cherry Cream Cheese Dessert
1 cup graham cracker crumbs
1 cup flour
2 sticks melted butter
1 cup chopped walnuts
1 teaspoon vanilla
1 cream cheese 8 oz
1 cup powdered sugar
1 8 oz container whipped cream topping
2 21 oz cherry pie filling (Do not use cheap brands. Bargain Brand Cherry filling taste too tart)
Use a 9 x 13 size pan for best results.
