How To make Mornay Sauce
2 c Milk
4 T Flour
4 T Butter
2 T Onions, minced
1 Bay leaf
3 T Swiss cheese, grated
3 T Parmesan cheese
2 T Heavy cream
Bring milk, onion and bayleaf to a full boil. Let stand for 10 minutes. Strain. Over low heat, melt butter in sauce pan, add flour, cook until light brown. Gradually add milk and cream, stirring constantly, until mixture starts to boil. Stir in salt and pepper to taste. Cook over low heat, stirring often, about 10 minutes. If not completely smooth, strain. Sprinkle in cheese; Stir until melted and smooth. Serve with pasta, eggs, vegetables or fish.

I’ll even give you a secret tip on how to make a lump-free sauce. This classic white sauce is, by nature, a basic sauce. However, when you pair it with additional flavors, the bechamel sauce transforms into delicious derivative sauces like Mornay (cheese sauce), soubise (onion sauce), crème (cream sauce) and even sausage gravy. Bechamel can be used with vegetables, chicken, pork, veal, and pasta dishes.
Ingredients:
- 2 cups or 500ml Milk
- 2 tbsp or 30g Butter
- 2 tbsp or 20g Flour
- 1/2 Onion or 50g
- 1 Bay Leaf
- 1 Clove
- 1/4 tsp White Pepper
- 1/4 tsp Salt

When making a croque monsieur it is vital to know:
1/ How to make Bechamel sauce
2 /How to flavour a Bechamel sauce
That will simply and effectively get the quality of your toasted sandwiches ( croque monsieur) a notch above the rest.
ingredients needed for the classic bechamel:
250 ml /1 cup of full cream milk (Whole milk)
20 grams / 1 tablespoon of butter
20 grams /3 tablespoon of flour
For the flavouring:
salt pepper
a pinch of grated nutmeg
a pinch of cayenne pepper
1 bay leave
30 grams of onion ( in one piece)
Ingredients needed for the bechamel I made in this video ( formula 2):
250 ml /1 cup of full cream milk (Whole milk)
20 grams / 1 tablespoon of butter
20 grams /3 tablespoon of flour
For the flavouring:
salt and pepper
a pinch of grated nutmeg
4 to 5 small dry morels mushrooms ( soak them in warm water first for 1 hour)
2 tablespoon of Morels liquor ( the water in which the morels soaked in)
1 bay leave
30 grams of onion ( in one piece)

Most croque monsieur are made with a classic bechamel sauce that has hardly has any taste and this can be a show stopper for a lot of people that are not particularly fan of that sauce.
In this video we learn how to make a tasty version of the bechamel sauce that you will be able to flavoured with anything you like. I am demonstrating the process of making a mushroom (Morels) bechamel but you can use the same technique and come with your twists on that recipe.
Trust me once you tried it you will never go back to the standard bechamel sauce recipe.

2 tablespoons minced garlic
1 large red onion, finely chopped
1 kilo ground meat (lean)
1-2 teaspoons paprika powder (optional)

- 6 tbsp or 84 g butter
- 6 tbsp or 60 g flour
- 3 cups or 711 ml milk
- 1 cup or 237 ml heavy cream
- 3 egg yolks
- 1 cup or 75 g gruyere cheese shredded
- 3 cups or 226 g cheddar cheese shredded
Mac and Cheese
- Mornay Sauce from above
- 16 oz or 454g of dry elbow pasta
- Taco seasoning to taste (you can add any seasoning to add additional flavoring to this dish)
Oven 350˚F (177˚C) – cook for 45 minutes or until top is slightly browned
