Heart Health - AgingWell Series February 2022
Since February is heart health month, the focus of this month’s AgingWell educational program is on heart health- specifically on controlling blood pressure. Attendees of February’s program will hear from David Reboussin, PhD, Professor at the Wake Forest School of Medicine, on the importance of controlling blood pressure, the lessons we’ve learned through the years about blood pressure and how the results of a recent study conducted at Wake Forest is changing the way physicians around the world are treating blood pressure.
You are invited to join Eric Brownlee, Executive Chef at the Katharine Brasserie & Bar in the historic Kimpton Cardinal Hotel in downtown Winston Salem as he shows us how to create Pomegranate Orange Glazed Salmon with roasted carrots, sweet potatoes, leeks, and fennel with baby arugula and living cress. Besides being delicious, this dish is also heart-healthy and surprisingly easy to create. So, whether you are preparing a weeknight meal for yourself or entertaining friends, this recipe is sure to become a go-to favorite!
Just ask anyone who has ever lived or visited Winston Salem and they will tell you that one of the priceless gems of this community is the Old Salem Museums & Gardens. Now visitors to Old Salem will have the opportunity to experience a program that has recently been opened to the public- the Seed Saving Lab at the Old Salem Horticulture Center. Katie Engelhaupt, Education Coordinator of Agriculture and Gardening at Old Salem takes us on a tour of the Seed Lab sharing the rich history of the seeds & plants that played a vital role in the lives of the people who settled this area.

PA Dutch Corn Fritters in Jo Ellen's Kitchen 1 18 21
Lebanon PA, 1.18.2021: PA Dutch Corn Fritters in Jo Ellen's Kitchen
Kum Esse (Come Eat.)
INGREDIENTS:
3 cups corn oil
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
2 ¼ teaspoons sugar
1 egg
½ cup milk
1 tablespoon melted butter or margarine
1 can whole corn, drained

DIRECTIONS:
Heat oil while mixing batter.
Pour flour, baking powder, salt, sugar, and egg into a bowl. Mix with a fork.
Add milk and melted butter. Stir. Add corn. Tumble gently until coated.
Tablespoon batter into hot oil. Cook on one side until all fritters float.
Flip over, and cook until light brown. Place a paper towel onto a plate. Remove corn fritters from oil to drain on towel and plate.
Eat plain, or drizzle with honey.
Yields 24 corn fritters. Alternatively, spray Pam into muffin tins, spoon in corn fritter batter, and bake at 325 degrees for 20-25 minutes until golden brown.
