How To make Mongolian Beef
4 c Peanut oil
15 ea Green onion tops
1 T Minced ginger
1 lb Flank or sirloin steak
1 1/2 T Water chestnut flour
2 ea Egg whites
1 ea Pinch salt
1 ea Cornstarch paste
1 x
sauce:
1 t Chili paste with garlic
1/4 c Chicken stock
2 T Dark soy sauce
1 ea Pinch sugar
1 1/2 T Dry sherry
++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ +++++ Preparation: Cut tops of green onions into 2" long pieces. Combine sauce ingredients in small bowl & stir thoroughly. Cut steak across the grain into thin slices, about 1/2" deep by 2" long. In bowl big enough to hold meat, combine egg whites, salt & water chestnut flour. Beat with chopstick until frothy. Add steak, & use fingers to coat each slice. Deep-frying: In wok, heat oil to moderately hot. When ready, piece of coated meat will rise to surface immediately. Fry meat in small batches; drop in 1 slice at a time to avoid sticking. Cook until lightly brown, about 1 minute. Drain on Chinese strainer or paper bag. Stir-frying: Remove all but 2 T of oil from wok. With wok at medium heat, quickly stir-fry green onions & ginger for about 20 seconds. Add sauce; bring to boil on high heat while stirring. Add beef all at once, & toss with sauce until beef is hot & coated. Push beef out of sauce, dribble in cornstarch paste to lightly thicken. Recombine. Serve immediately.

Ingredients:
Step 1:
- Beef Julienne ½ kg (Undercut only)
- Corn Flour 3-4 tbs
- Oil 1/2 Cup
- Salt ½ tsp
Step 2:
- Dried Red Chilies OR Red Button Chillies 3-4
- Oil 2-3 tbsp
- Dark Soya Sauce 2 tbsp
- Ginger chopped 1 tsp
- Hoisin Sauce 2-3 tbsp
- Brown Sugar 2 tsp
- Salt to taste or 1 tsp
- Water ¼ cup
- Green Onion (White part chopped) 2 tbsp
- Green Onions Green part chopped 3 tbsp
- Slurry (Water ¼ Cup + 1 tbsp Corn Flour)
- Sesame Seeds for Garnishing
- Black Pepper ¼ tsp or to taste
Directions:
- Coat the beef with corn flour & salt and leave it for 15-20 mins. Later stir fry in oil and set aside.
- Heat the oil in a pan and add chopped ginger, chili buttons/dried chilies and spring onion white part and Stir for 1-2 min.
- Mix well and then add water, hoisin sauce, dark soya sauce and lastly brown sugar. Once well combined add the slurry and keep mixing with spatula/spoon till thickens. Add beef and mix
- Add green part of spring onion in last and give a last mix. Sprinkle sesame seeds
- Serve with rice of your choice OR with glass noodles.
Homemade Hoisin Sauce:
- Soya Sauce 4 tbsp
- Peanut Butter 2 tbsp
- Honey 1 tbsp.
- Rice vinegar 2 tsp
- Garlic paste 1 tsp
- Sesame oil 2 tsp
- Hot sauce 1 ½ tsp
- Black pepper powder ¼ tsp or to taste
Direction:
- Mix all the ingredients in a bowl with whisk.
- Use for recipe and reserve rest in fridge for next 1 week.

Ajza:
Step 1:
- Beef Julienne ½ kg (Undercut only)

- tel 4-5 tbs
- Namak ½ tsp
Step 2:
- Dried Red Chilies OR Red Button Chillies 3-4
- Tel 2-3 tbsp
- Dark Soya Sauce 2 tbsp
- Adrak chopped 1 tsp
- Hoisin Sauce 2-3 tbsp
- Brown Sugar 2 tsp
- Namak to taste or ½ tsp
- Pani ¼ cup
- Green Onion (White part chopped) 2 tbsp
- Green Onions Green part chopped 3 tbsp
- Slurry (Water ¼ Cup + 1 tbsp Corn Flour)
- Til for Garnishing
- Kali Mirch Powder ¼ tsp or to taste
Directions:
- Coat the beef with corn flour & salt and leave it for 15-20 mins. Later fry in oil and set aside.
- Beef ko corn flour naka se coat karein aur 15-20 mins ke baad fry karlein. Alag rakh dein.
- Tel garam karein pan main is main adrak, sukhi mirch aur green onion daal ke stir fry karein.
- Is main pani phir hoisin sauce phir dard sauce aur akhir main brown sugar shamil karein. Chamcha chelate rahein aur pani aur corn ka mixture daalein tab tak gravy thick na hojaye. Is main beef shamil karein.
- Akhir main spring onion ka green hissa aur til ke daani shamil karein.
- Chawal ya noodle ke saath serve karein.

- Sab ko ek saath mila ke whisk karein jab tak yak jaan na hojaye
- Bache hue sauce ko ek haft eke ander use karlein.

2 teaspoons minced ginger
3 cloves garlic, minced
4 green onions, cut into 2” (5 cm) pieces, then halved lengthwise
