How To make Mint and Coriander Chutney
1 bn Coriander leaves
1 bn Mint leaves
1 Green chilli
1 oz Seedless tamarind
1 ts Salt
4 tb Water
1 md Onion
1. Wash and soak tamarind in water for 1/2 hour
2. Clean pick and wash the coriander and mint.
3. Separate pulp from tamarind and squeeze out the pulp.
4. Grind coriander, mint, green chili and onion to fine paste.
5. Add the tamarind pulp and salt.
6. Blend well.
In an airtight jar can be refrigerated for up to one week. Recipe By : Somesh Rao

Tandoori Mint Chutney recipe :
Coriander leaves - 1 Cup
Mint Leaves - ½ Cup
Cumin Powder - ¼ tsp
Chaat Masala - ½ tsp
Lemon Juice - 1 tsp
Salt - 1 tsp
Water - ¼ Cup
Curd - ½ Cup
Cooking Instructions:
1. In a mixer jar, add in the coriander leaves, mint leaves, cumin powder, chaat masala, lemon juice, salt and water. You can also add the young stalks of the coriander leaves for the chutney.
2. In a bowl, whisk the curd until it turns smooth.
3. Add the paste to the curd and whisk well again.

Mint Chutney
Ingredients
2 handful of mint leaves
Onion – 1
Garlic cloves – 5
Ginger
Green chilli – 3
Urad dal – 1½ teaspoon
Cumin seeds – ¼ teaspoon
Coriander leaves
Curry leaves
Coconut – 4 tbl spoon
Oil – 2 tbl spoon
Mustard – ¼ teaspoon
Dry chilli – 1
Salt

To Make Coconut Coriander Chutney
Oil - 1 Tbsp
Chana Dal - 1 Tsp
Urad Dal - 2 Tsp
Garlic - 5 Cloves
Ginger
Onion - 1 No.
Green Chilli -5 Nos
Coconut - 1/2 Cup
Tamarind
Mint Leaves
Coriander Leaves
Rock Salt - 1 Tsp
Hing - 1/4 Tsp
Water
For Tempering
Oil - 2 Tsp
Urad Dal - 1/2 Tsp
Mustard Seeds - 1/2 Tsp
Cumin Seeds - 1/2 Tsp
Red Chilli
Asafoetida Powder - 1/4 Tsp
Curry Leaves
Method:
1. Take oil in a pan. Add chana dal and urad dal to it.
2. Roast the dals and then add in chopped ginger, garlic, onions and green chillies.
3. Roast the onions until they are slightly pink and then add in coconut bits. Mix.
4. Aster 2 mins, add in tamarind bits and mix well.
5. Then add in curry leaves, mint leaves and coriander leaves. Mix and add rock salt along with hing.
6. Cook until the leaves are no more raw on a low flame and turn off the stove.
7. Let the ingredients cool down completely and then transfer them into a mixer jar.
8. Grind then all once, add water and grind into a fine paste.
9. For the tempering, take oil in a pan and add urad dal, mustard seeds, cumin seeds.
10. Once the mustard seeds start splattering, add in red chillies, curry leaves and hing.
11. Transfer the tempering into the chutney and mix.
12. Yummy and nutritious Coconut Coriander Chutney recipe is ready to be served with hot idlies, dosas or any other tiffin you like.
