How To make Miniature Candy Bars
1 lb Confectioners sugar
2/3 c Sweetened condensed milk
1/2 ts Vanilla
1/2 ts Almond extract
12 oz Semisweet chocolate pieces
12 oz Butterscotch flavored pieces
1 lb Chopped Spanish peanuts
Combine confectioners sugar, sweetened condensed milk, vanilla and almond extract in large bowl. Mix thoroughly, using hands to knead. Roll mixture between two sheets of plastic wrap to form 13x9 rectangle. Chill in refrigerator. Meanwhile, melt chocolate and butterscotch pieces in top of double boiler over hot water. Stir in peanuts. Spread one half of chocolate mixture in buttered 13x9x2 baking pan. Carefully place fondant layer on top. Spread remaining chocolate mixture on top. Refrigerate until firm. Remove from refrigerator 10 minutes before cutting. Cut into bars. Store in refrigerator. Makes 48 pieces. Origin: Farm Journal's Choice Chocolate Recipes Shared by: Sharon Stevens.

Salted Butter Shortbread Cookie Base:
- 1 cup (225g) SALTED butter, softened
- 3/4 cup (100g) powdered sugar
- 2 cups (300g) all-purpose flour
- 1 teaspoon (10g) vanilla extract
Caramel:
- 1 cup (227g) butter
- 1.25 cups (195g) light brown sugar
- 1.25 cups (370g) light corn syrup
- 14 ounces (397g) sweetened condensed milk *homemade version totally viable*
- 1 vanilla bean pod scraped of beans
Chocolate coating:
- 1lb (450g) 60-70% cacao dark chocolate, very finely chopped

Candy Bar Cookies | A mini candy bar in a peanut butter cookie!
Candy bar cookies are just as delicious as they sound. A simple buttery soft peanut butter dough is prepared, and a mini candy bar is stuffed inside. Once baked, the cookie envelops the candy bar and becomes the best treat you’ll ever eat. These will go fast, and everyone loves them at Christmastime!

INGREDIENTS
- 16 tbsp unsalted butter, room temperature
- 1 cup light brown sugar
- 1 cup white granulated sugar
- 2 large eggs
- 1 cup creamy peanut butter
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 60 mini-size candy bars (I use Snickers)
INSTRUCTIONS
- Preheat the oven to 350°F.
- In the bowl of an electric mixer, cream together butter and sugars until light, fluffy, and well blended. This takes 3-5 minutes. Once light and fluffy, add the eggs, one at a time, mixing until incorporated. Add the peanut butter and vanilla extract and mix.
- Add the flour, baking powder, baking soda, and salt. Mix until just combined with no dry streaks remaining.
- Use a 1/2-oz cookie scoop or 1 tbsp measuring spoon to form dough balls. Flatten slightly and place a bite-size candy bar in the center. Form dough around the candy bar, ensuring the entire candy bar is encased. Roll in sanding sugar, colored or not, then place on a parchment-lined baking sheet. Place in preheated oven for 12-15 minutes per pan.
Cookies will flatten and crack slightly around the edges but still be soft.
- Remove from the oven and cool for five minutes on the pan, then cool completely on rack.
