How To make Mildred's Spinanch Sandwich
3/4 c Unsalted butter, softened
1 tb Lemon juice
1 tb Fresh dill, cut fine or
1 ts Dried dill
Black pepper Fresh spinanch leaves W/heavy stem or spine gone 2 Loaves fresh, white thin-
-sliced sandwich bread In a small bowl mix butter, lemon juice and dill. Sprinkle generously with fresh black pepper. Remove crusts from thin-sliced bread. Spread one side of a slice of bread with lemon-butter mixture. Place two fresh spinanch leaves in center of bread with leaf points extending out a little on each side of bread. Carefully roll bread slice to form a log. Hold it in place with a toothpick. Place on a baking pan. Repeat with the other bread slices and gently push together in the pan so they will retain their shape. Cover tightly and refrigerate for a few hours until needed.

FILLING:
18 sliced - chicken breast (marinated with salt and black pepper
and coated with flour, egg and bread crumbs then fry
until golden brown).
18 sliced - cheese
TOPPING: Brush this ingredients on top of the french bread.
1/4 sliced - melted butter
1/2 tablespoon - thyme leaves
1 tablespoon - shredded cheese
1 tablespoon - minced garlic
Wrap tin foil all the french bread and put in the oven for 20 minutes, 200 temperature.

Creamy Garlic Butter Tuscan Shrimp
Creamy Garlic Butter Tuscan Shrimp coated in a light and creamy sauce filled with garlic, sun dried tomatoes and spinach! Packed with incredible flavors!
Servings: 4
Ingredients
2 tablespoons salted butter*
6 cloves garlic, finely diced
1 pound (500 g) shrimp (or prawns) -- tails on or off
1 small yellow onion, diced
5 oz. (150 g) jarred sun dried tomato strips in oil, drained
1 3/4 cups heavy whipping cream
Salt and pepper, to taste
3 cups baby spinach leaves
2/3 cup fresh grated Parmesan cheese
2 teaspoons dried Italian herbs
1 tablespoon fresh parsley, chopped
Instructions
Heat a large skillet over medium-high heat. Melt the butter and add in the garlic and fry until fragrant (about one minute). Add in the shrimp.
Fry the onion in the butter remaining in the skillet. Add the sun-dried tomatoes and fry for 1-2 minutes to release their flavors.
Reduce heat to low-medium heat, add the HWC and bring to a gentle simmer, while stirring occasionally. Season with salt and pepper to your taste.
Add in the spinach leaves and allow to wilt in the sauce, and add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. Add in the italian herbs.
Serve over pasta, rice or steamed veg.
