1 Box yellow cake mix 3 oz Inst. pistachio pudding mix 4 Eggs 1/2 c Plain yogurt 1/2 c Oil (corn) 1/2 ts Coconut flavoring
MIDORI GLAZE:
2 c Powdered sugar 1/2 c Midori 1/2 c Cream cheese 2 tb Butter 1/2 ts Coconut flavoring Beat cake ingredients for 4 minutes at medium speed. Pour into well greased Bundt pan. Bake at 350 F for 50-55 minutes. Cool about 15 minutes in pan, then turn out onto cooling rack. For glaze: Mix glaze ingredients at high speed until smooth and spreadable. Glaze while cake is slightly warm.

Cake 1 box white cake mix (Yellow cake mix will not give the stunning green color) 1 (3 1/2 ounce) package instant pistachio pudding mix 4 eggs or 1/3 cup plus 2 ½ Tbsp Egg power with equal parts water 1⁄2 cup sour cream 1⁄2 cup vegetable oil 3⁄4 cup Midori melon liqueur 1⁄2 teaspoon coconut flavoring
Frosting 2 cups powdered sugar 1⁄4 cup Midori melon liqueur 1⁄4 cup cream cheese 2 tablespoons butter or Ghee 1⁄2 teaspoon coconut flavoring
Preheat oven to 350 degrees F. In bowl, combine all ingredients except frosting; beat 2 minutes. Pour into well-greased Bundt pan. Bake 25 to 35 minutes based on your oven. Remove from oven and cool in pan about 10 - 15 minutes. Remove from pan, prepare frosting and frost cake while still warm. Cool completely before serving. Frosting In bowl, mix and beat Butter or Ghee, cream cheese until smooth. Add Midori and beat until smooth, slowly add the powdered sugar smooth and spreadable. Frost cake while still warm.

220g short grain rice (Japanese rice) 1/2 tsp salt 4-5 tbsp boiling water (more or less) Sesame oil
1. Pour short grain rice into a bowl. Add water, wash and drain. Repeat until the water drains clear. Soak the rice in clean water overnight.
2. Strain the rice and grind in a food processor until fine. Sift into a bowl. Some rice pieces are big to sift, so you must grind them again in a food processor.
3. Add salt to the flour and boiling water one tablespoon at a time mixing completely before adding another. How much water you need depends on the moisture of your flour. Knead until you have a soft and smooth dough.
4. Place the rice cake dough in a steamer and steam over medium high heat for 30 minutes.
5. Spread sesame oil on work surface. Put steamed rice cake on work surface and pound with a pestle, until the dough becomes smooth and elastic. This can take a few minutes. The longer you pound, the chewier the rice cakes will be.
6. Divide into 4 equal pieces. Take one piece and knead until soft. Roll into a long cylinder, and cut into 5cm pieces or the size you desire. Repeat with the rest of the dough.
7. Spread sesame oil on your hands and rub the rice cakes. It gives good flavor and prevents them from sticking to each other. They taste best fresh. Refrigerate for 2-3 days.

1. Submerja o arroz com água, mexa com a mão e deixe escorrer. Repita até que a água esteja quase transparente. Deixe o arroz numa tigela com água durante a noite. Coloque na geladeira se tiver calor.
2. No dia seguinte, coloque num escorredor. Pode deixar ficar lá durante uma hora. Transfira o arroz para um processador de alimentos e triture os grãos até obter uma farinha fina. Peneire a farinha para uma tigela. Alguns pedaços de arroz são grandes para peneirar, por isso vai ter que triturá-los novamente no processador de alimentos.
3. Adicione o sal à farinha, e aos poucos 4-5 colheres de sopa de água fervendo. A quantidade depende da umidade da sua farinha. Misture com uma colher e depois amasse até obter uma massa homogênea.
4. Cozinhe no vapor em fogo médio por 30 minutos.
5. Espalhe o óleo de gergelim na superfície de trabalho. Coloque a massa de arroz cozido no vapor na superfície de trabalho. Enquanto a massa estiver quente bata com um pilão, até que fique lisa e elástica. Isso pode levar alguns minutos. Quanto mais tempo você bater, mais mastigáveis serão os bolos de arroz.
6. Divida em 4 partes iguais. Pegue um pedaço e amasse até ficar maleável. Enrole a massa em forma de um cilindro longo e corte em pedaços de 5 cm ou do tamanho que desejar. Repita com o restante da massa.
7. Espalhe óleo de gergelim nas mãos e esfregue os bolinhos de arroz. Dá bom sabor e evita que grudem uns nos outros. Está pronto a usar ou pode colocar na geladeira por 2-3 dias.
