How To make Microwave Maple Bacon Pancake
1 1/2 c Bisquick baking mix
1 1/2 c Cheddar cheese; shredded
3/4 c Milk
1/4 c Maple flavored syrup
1 tb Sugar
2 Eggs
12 sl Bacon; cooked crisp, crumble
Grease and flour microwaveable pie plate, 10x1 1/2". Beat baking mix, 1/2 cup of the cheese, the milk, syrup, sugar and eggs with wire whisk or hand beater until only small lumps remain; pour into pie plate. Place pie plate on inverted microwaveable dinner plate in microwave oven. Microwave uncovered on high (100%), rotating pie plate 1/4 turn every 2 minutes, until most of top no longer appears doughy, 5 1/2 to 7 1/2 minutes. Sprinkle with remaining cheese and the bacon. Microwave uncovered on inverted plate just until cheese is melted,1 to 1 1/2 minutes longer. Serve with maple flavored syrup if desired. Makes 8 servings. -----

Pancake Bacon

INGREDIENTS
8 slices thick cut bacon
4 cups pancake batter
Maple syrup
DIRECTIONS
Heat skillet or griddle to a medium high heat and cook bacon until fat is rendered and bacon is crisp. Remove bacon and place on a paper towel lined plate to let excess fat drain off.
Clean skillet or griddle and spray with cooking spray. Heat to medium high heat and place cooked bacon strips back on the cooking surface. Pour pancake batter around the strip of bacon, about 1/2 a cup per slice of bacon. When little bubbles start to form at the edges of the batter, flip the pancakes and cook the other side until golden brown.
Serve warm with maple syrup.
Yield 4 Servings

You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!
