1 large onion coarsely chopped
2 large carrots coarsely chopped
1 stalk celery coarsely chopped
3 cloves garlic grated or minced
1 teaspoon cumin ground
1 sprig rosemary
2 bay leaves
4 cups vegetable broth
1 can (15 ounces) diced tomatos
1 can (15 ounces) white beans drained and rinsed
1 heaping cup (4 ounces) green beans halved
4 cups (15 ounces) cauliflower florets
1½ cups (8 ounces) potatoes peeled and diced
4 cups (4 ounces) spinach optional
1½ teaspoon salt or more to taste
¼ teaspoon black pepper or red pepper flakes

240 grams white beans drained and rinsed

200 grams potatoes peeled and diced

¼ teaspoon black pepper or red pepper flakes

Mexican vegetable stew

Servings: 4
Preparation time: 30 minutes
Cooking time: 30 minutes
Ingredients:
• 1 cup water
• One medium onion, chopped
• One clove garlic, minced
• One green bell pepper, chopped
• One carrot, chopped
• One stalk celery, chopped
• One zucchini, chopped
• One cup fresh or frozen corn kernels
• 1 16-ounce Canned kidney beans, drained and rinsed
• 1 tablespoon chili powder
• ½ teaspoon ground cumin
• ½ teaspoon dried oregano
• 1 tablespoon cornstarch, mixed with ¼ quarter cup cold water
Directions
• Place the water in a medium pot. Add the onion and garlic. Cook and stir for several minutes over medium heat. Add the green pepper, carrot, and celery. Cook stirring frequently, about 10 minutes. Add the remaining ingredients except the cornstarch mixture. Cover and cook over medium low heat for 20 minutes, stirring frequently.
• Stir in the cornstarch mixture and continue to cook, stirring until thickened.
• Served with greens or potatoes.

Cook for 18 -20 minutes
Ingredients
6 to 8 cups water
2 Tbsp olive oil (or oil of choice)
3 Tbsp Chicken bouillon (Knorr natural chicken bouillon)
3 ripe tomatoes
1 small yellow onion
3 garlic cloves
2 Anaheim peppers
3 Potatoes
3 Carrots
2 to 3 Zucchinis
Small bunch cilantro
1 Tbsp Mexican Oregano
Instant pot Sticky rice
In Colorado 1 cup rice to 1 1/2 cups water
Anywhere else 1 cup rice to 1 cup water
1 splash of oil to keep it shiny : )
Tip‼️
If you have home made chicken broth use that instead of chicken bouillon
If using 8 cups water you might need 4 Tbsp Chicken bouillon
If using regular chicken bouillon Start with 2 and adjust to taste
Of you chopped your veggies larger cook for 25-30 mins
Keep this soup handy in your freezer because you never know when it’s your turn to heal mis amores❤️

A simple vegetable soup like this is my absolute favorite. It's nourishing, comforting, fresh, and light, yet filling enough to be a full vegetarian meal. But truth be told, I was never a fan of vegetable soup until I started making it myself at home, with this recipe. Because other versions I had tried were always been a bit bland and boring.
So what makes my version unique (and better)? The vegetables are sautéed with Italian seasoning and loads of garlic, then simmered in a savory broth with fresh lemon juice and parsley. And that punch of fresh lemon really brightens and enhances the flavor!
