How To make Mexican Shrimp Cocktail
1 c Water
1/3 c Lime Juice
1 ea Clove Garlic; Finely Chopped
2 ts Salt
1 x Pepper; Dash of
24 ea Shrimp; Raw, *
1 ea Avocado; Peeled And Chopped
2 ea Jalapeno Chiles; **
1/4 c Tomato; Chopped
2 tb Onion; Chopped
2 tb Carrot; Finely Chopped
2 tb Cilantro; Fresh, Snipped
2 tb Vegetable Or Olive Oil
1 1/2 c Lettuce; Finely Shredded
1 x Lemon Or Lime Wedges
* Shrimp should be peeled and deveined. ** Jalapeno Chiles should be seeded and finely chopped. ~------------------------------------------------------------------------- Heat water, lime juice, garlic, salt and pepper to boiling in a 4-quart Dutch oven; reduce heat. Simmer uncovered until reduced to 2/3 cup. Add shrimp. Cover and simmer 3 minutes; do NOT overcook. Immediately remove shrimp from liquid with slotted spoon; place in bowl of iced water. Simmer liquid until reduced to 2 T; cool. Mix reduced liquid, shrimp and remaing ingredients except shredded lettuce and lemon wedges in a glass or plastic bowl. Cover and refrigerate at least 1 hour. Just before serving place 1/4 cup lettuce on each of 6 serving dishes. Divide shrimp mixture among dishes. Garnish with lemon wedges.

The best part is it is easy to do because all you are doing is prepping and assembling. This recipe does not require any cooking at all. INGREDIENTS
1 lb raw shrimp
8 oz flounder (or fish of your choice)
8 oz lump crab meat
1 tbsp oil
2 cloves minced garlic
* a small amount of fresh onion
16 oz tomato puree
3 tbsp sugar (or to your taste)
1/2 cup (4 oz) fresh lime juice
2 to 3 tbsp Maggi sauce (or soy sauce)
3 tbsp hot sauce of your choice (I used Louisiana hot sauce)
1/4 cup (2 oz) clam juice
salt and pepper to taste
*the Maggi sauce is salty so I leave the salt out*
2 stalks scallions
1 jalapeno (use more if you like it spicy)
1 small onion chopped
fresh cilantro (use the amount to your preference)
2 avocados
EASIER VERSION MEXICAN SEAFOOD COCKTAIL
1 1/4 cup (10 oz) ketchup
1 1/2 cup (12 oz) Clamato (clam tomato drink mix)
1 tbsp Maggi sauce (or soy sauce)
2 tbsp Louisiana hot sauce (or hot sauce of choice)
1/3 cup (2.6 oz) lime juice
salt and pepper to taste
1 lb cooked shrimp
8 oz cooked flounder
8 oz lump crab
2 Roma tomatoes chopped
2 stalks scallions
1 small onion diced
fresh cilantro (amount to your preference)
2 small avocados
