How To make Mexican Lasagne
1 pound ground beef, extra lean
1/2 cup onion
chopped
1/2 cup green bell pepper :
chopped
1/4 cup water
8 ounces tomato sauce
6 ounces tomato paste
1/2 package taco seasoning mix
1/2 cup black olives -- chopped
6 flour tortillas non-fat
1 cup mozzarella cheese non-fat -- shredded
1 cup cheddar cheese non-fat -- shredded
Preheat oven to 375 degrees F.
Cook ground beef with onions and green peppers. Then combine the drained beef with the tomato paste, sauce, water and seasoning and simmer until thick and bubbly. In a 13 x 8 pan make a single layer with 3 of the tortillas. Pour half of the sauce over it evenly, and sprinkle half the olives and half of the cheeses. Repeat. Bake for 25 to 35 minutes.

Taco Lasagna -- Easy Mexican Casserole Full of beef, beans, tomatoes and flour tortillas.
Taco Lasagna
Ingredients:
• 2 lbs. ground beef
• 1 poblano pepper (seeded and diced)
• 1/2 cup chopped onion
• 1 cup water
• 2 envelopes of taco seasoning
• 1 can black beans rinsed and drained
• 1 28oz can diced tomatoes undrained Rotel or Mexican
• 9 flour tortillas (8 inches)
• 1 can refried beans
• 4 cups shredded Mexican cheese blend
Instructions:
1. Preheat the oven to 350 degrees
2. Spray a 9×13 baking pan with cooking spray.
3. In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain off any fat.
4. Add water and taco seasoning packets. Bring to a boil. Reduce heat and then simmer, uncovered, for 2 minutes.
5. Stir in black beans and tomatoes (with juice). Simmer, uncovered, for 10 minutes.
6. Place 2 tortillas in the bottom of a greased 13×9-in. baking dish. Break a third tortilla and piece it together in any holes to make as much of a complete layer of tortillas as possible.
7. Spread with half of the refried beans and half of the beef mixture.
8. Sprinkle with 1 cup cheese.
9. Repeat layers (3 tortillas, remaining beans, remaining beef, 1 cup of cheese).
10. Top with remaining tortillas and 2 cups cheese.
11. Cover with sprayed foil and bake at 350° for 25-30 minutes or until heated through and cheese is melted.
12. Serve with sour cream and fresh pico de gallo.

Hearty Mexican Lasagna // Kevin Is Cooking
Going the Tex Mex route on this Hearty Mexican Lasagna, I kept with traditional lasagna noodles and went south of the border for spices. Refried beans, corn, two cheese with a beef and pork salsa meat sauce make this a crowd pleaser.
