How To make Mexican Chicken (Pollo Mexicano)
1 ts Chilli powder
2 tb Soft brown sugar
2 tb Worcestershire sauce
150 ml Chicken stock
4 Skinless chicken breasts
1 ts Celery salt
2 tb Red wine vinegar
3 tb Tomato ketchup
3 Drops tabasco sauce
150 ml Natural yoghurt
Mix the chilli powder with the celery salt, brown sugar, red wine vinegar, worcestershire sauce, tomato ketchup, chicken stock and tabasco sauce. Deeply score the chicken and arrange in a flameproof dish. Pour over the chilli mixture, heat the grill to high and cook the chicken for 5 minutes. Reduce the heat and cook for 10 minutes on each side. Baste the chicken thoroughly with the chilli sauce and grill for a further 10 minutes or until the meat is tender and the juices run clear. Transfer the chicken to a warmed serving dish and spoon over any sauce from the grill pan. Top each portion with a generous dollop of natural yoghurt. Garnish with coriander or parsley sprigs and serve with a salad. Calories: 240 per serving

Mexican Pollo Asado/Mexican Marinated Chicken
2 lb boneless skinless chicken thighs
Marinade:
1 bunch of cilantro (after I made this I realized that I could have used 1/2 this amount of cilantro.)
juice of 2 oranges
juice of 2 limes
2 packets of Sazon seasoning Goya
(con culantro y achote) (coriander & annatto)
1 tbsp white wine vinegar
1/2 tsp salt
1/2 tsp pepper
1/2 onion
1/4 cup olive oil
**cook approximately 5 to 6 minutes on each side.**

ARROZ CON POLLO
¾ cup Jasmine rice
2 cups chicken stock or water, (we use homemade stock)
1 tbs vegetable oil
2 garlic cloves
1 tsp whole cumin to crush
½ tsp coarse black pepper or peppercorns
1-2 tsp salt to taste
1 dash of oregano or to preference
¼ to ½ cup tomato sauce, preference
⅓ cup chopped or diced white onion
2 - 3 deboned chicken thighs cut into 1” pieces

Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! today I’m going to share with you how to make a super easy caldo de pollo con arroz ( chicken and rice soup) this is a family’s favorite perfect for the cold weather or when you are sick, Today I share a different technique of cooking it compare to my old video, I have learned a lot within the last two years, the flavor is the same but I find it that by frying the chicken first it makes it more tasty and our broth is more flavorful and frying the rice first helps it not to overcook and end up with a thick consistency, overall this way is sooo much better( sorry mom I had to change a couple things, is still her same recipe tho) I just have more control on my broth ☺️ keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, you can always adjust it to your taste, I really hope you enjoy it as much as me and my family do, and as always if you do please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel please hit that subscribe buttons so you can be part of our family!!!!!!

Ingredients:
4lbs chicken
1 1/2 cup rice
3 Roma tomatoes
1 small onion
1 garlic clove
fresh cilantro
1 tsp ground cumin or 1/2 tsp whole cumin
1 tbsp tomato bullion
1 tbsp chicken bullion
10-12 cups water

It's Day 4 of my slow cooker Crockpot recipes. Today, I am making slow cooker caldo de pollo. This Mexican-Style chicken soup is perfect for a weeknight meal!
SLOW COOKER BEEF CALDO
INGREDIENTS
3 1/4 lbs bone-in chicken pieces
1 1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 lb cabbages
2 medium to large Russet potatoes
2 ears of corn
5 small to medium carrots
1 to 2 Mexican squash
1 celery stick
1/2 small onion
2 to 3 cloves of garlic
1 1/2 Tbsp tomato chicken bouillon powder
fresh cilantro
1 jalapeno (optional)
5 to 6 cups of water
salt and season to taste
