How To make Arroz Con Pollo{Chicken with Rice}
3 pounds broiler-fryer chicken
cut up
3/4 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon pepper
2 1/2 cups chicken broth
1 cup uncooked regular rice
1 medium onion :
chopped
1 teaspoon garlic salt
1/2 teaspoon dried oregano leaves
1/8 teaspoon ground turmeric
1 bay leaf crumbled
1 10 oz. pkg. frozen green peas :
thawed and drained
Heat oven to 350 degrees. Place chicken, skin sides up, in ungreased rectangular baking dish, 13 x 9 x 2-inches. Sprinkle with salt, paprika, and pepper. Bake uncovered 30 minutes. Heat broth to boiling. Remove chicken and drain fat from dish. Mix broth, rice, onion, garlic salt, oregano, turmeric, bay leaf, and green peas in baking dish. Top with chicken; cover with aluminum foil. Cook in oven until rice and thickest pieces of chicken are done and liquid is absorbed, about 30 minutes.

Arroz con Pollo. Mexican style Chicken and Rice
3 lbs. Chicken parts I used thighs
2 cups long grain rice
4 cups chicken stock/broth
3 garlic cloves chopped
½ red bell pepper
½ white onion chopped
½ can diced tomatoes (7oz)(Red Gold) is what I used
½ can tomato sauce (4oz)
1 ½ teaspoon ground comino
2 teaspoons salt
¼ cup tomato sauce
1 ½ tablespoon Knorr chicken flavor bouillon
3 tablespoons chopped cilantro optional

INGREDIENTS
1 1/2 to 2 lbs (680 g to 907 g) bone in chicken (seasoned to preference)
1 cup (160 g) long grain rice (rinsed and dried)
2 cups (473 ml) water
1 Tbsp chicken bouillon powder (10 g) (or 1 Knorr brand chicken bouillon cube)
1/2 cup to 2/3 cup (118 ml to 157 ml) crushed tomato (or tomato sauce)
1/2 tsp (1 g) onion powder
1/2 tsp (1 g) garlic powder
1/4 tsp (.5 g) ground cumin
1/4 tsp (.5 g) black pepper
2 cloves garlic minced (13 g)
1 small to medium-sized onion (175 g)
RUB SEASONING
1 tsp (3 g) season all seasoning salt
1/2 tsp (1 g) onion powder
1/2 tsp (1 g) garlic powder
1/2 tsp (1 g) lemon pepper

ARROZ CON POLLO with vegetables, Oh what a treat!! TRADITIONAL, very easy and quick. This dish brings back beautiful memories of my childhood, my momma fixed it often and would have it ready for us when we got home from school, she had a pot of pinto beans to serve along with the ARROZ CON POLLO and fresh homemade flour tortillas just like her mom and grandma used to make, the tradition lives on, as I pass it down, such an inexpensive dish with amazing flavor.
INGREDIENTS FOR BROWNING RICE
1 Tbsp vegetable oil
1 & 1/2 C. Rice
INGREDIENTS FOR ARROZ CON POLLO with vegetables
2 Tbsp vegetable oil
2 bone - in chicken legs (skin on)
3 bone - in chicken thighs cut in half (skin off)
1/2 medium onion (chopped)
2 green onions (white and green)
1/4 C. chopped carrots
1/4 C. celery (diced)
3/4 tsp whole cumin
3/4 tsp peppercorns
2 large garlic cloves
1/2 C. water (for molcajete)
1/2 medium green bell pepper (strips)
1 & 1/2 large Roma tomatoes (diced)
1 & 1/2 Tbsp tomato paste
4 C. water
1 & 1/2 Tbsp chicken bouillon
1/2 tsp salt (you decide)
browned rice
1 medium potato (cubed medium)
1/3 C. chopped cilantro (optional)

4-5 chicken thighs
Lime juice & cold tap water to rinse chicken.
4 tablespoons olive oil, divided.
2 teaspoon homemade adobo seasoning
1 teaspoons smoked paprika
2 teaspoon all purpose seasoning.
Fresh black pepper to taste, divided.
2 small heapfuls Caribbean seasoning blend
1/2 cups yellow onion, diced
1 cup red bell pepper, diced
2 fresh garlic cloves,
2 tablespoons butter
Salt (optional)
2 cups long-grain rice, washed.
1 teaspoon fresh thyme leaves (3-4 sprigs).
1 cup dry white wine
1 (14-oz) can roasted diced tomatoes including juice.
1 cup chicken broth
1 teaspoon turmeric
dry bay leaves
1-2 teaspoons capers
Red pepper Flakes to taste
1 cup frozen peas (not thawed)
Garnish: chopped fresh flat-leaf parsley
