A creamy, crowd-pleaser, gluten-free, and lip-smacking Elote dip aka Mexican street corn dip! Grilled corn mixed with a luscious creamy mixture, spices, fresh cilantro, and cheese!

HOW TO MAKE PERFECT MEXICAN RICE EVERY TIME: Easy Recipe and Tips for Cooking Delicious Mexican Rice
For years, I struggled to make good Mexican Rice. It was dry or mushy, and always inconsistent...until I learned HOW TO MAKE PERFECT RICE EVERY TIME. In this video, I share my easy recipe, as well as some tips for cooking delicious Mexican Rice. Some of you may call it Spanish Rice. What's funny is, when I was growing up, we just called this, rice. At any rate, read on for the recipe.
Mexican Rice
1 cup long grain rice
2 cups hot water
2 tsp. chicken bouillon
1/4 of an onion, chopped small
1/2 an 8oz. can of tomato sauce
1 tsp. cumin
salt to taste
*You can also add peas, carrots, and corn to Mexican rice, if you choose.
Place skillet on stove over medium high heat and coat the bottom of the pan with oil. Add in rice and brown, stirring continuously to ensure it doesn't burn. As rice begins to turn a light golden color, add in chopped onion and continue stirring until onion is soft and rice is golden. Next, add in the tomato sauce, the salt, the cumin, the hot water, and the chicken bouillon and mix well. (This is the last time you will stir.) When it comes to a boil, reduce the heat to low, cover pan with lid, and let cook untouched for 15 minutes. (Do not remove the lid during this time.) After 15 minutes, remove from stove, but leave lid on, and let sit for 5 to 10 minutes. Then remove lid and fluff rice with a fork. It should be cooked to perfection.

HOW TO MAKE DRY BEANS IN THE INSTANT POT// Easy Make Your Own Refried Beans
Today I’m sharing with you how to make the best instant pot beans from dry beans as well as a recipe to make your own refried beans! These are super soft, melt in your mouth beans perfect for adding to any recipe! They are also super easy to make ahead and refrigerate or freeze so you only need to do this once to make your own beans and have ready made beans on hand.
If you are someone who eats a lot of beans, you can save so much money and trim your food budget by simply making these beans once a month and freezing them in portions! If you are plant based or vegan, most likely beans are a big part of your diet and this is an easy way to save money.
We live in Colorado and are a family of 4 which includes myself, my husband and our 2 toddlers. I am plant based and follow a high carb low fat vegan diet, from the book the starch solution by Dr. John McDougall, so beans are a substantial part of my diet! I enjoy sharing healthy recipes that are budget friendly here on this channel. We use a lot of cheap ingredients that allow us to have an affordable grocery budget while also reaching some of our other financial goals!

RECIPES:
INSTANT POT BEANS
1lb dry beans
8 cups water
½ tsp salt (optional)
????Rinse beans well
????Place beans, water, and salt if desired into instant pot
????Stir and cook on high pressure for 38 minutes with a quick release
????For refried beans, save some starchy water and see Refried Bean Recipe below
????For regular beans, drain any excess water and enjoy!
REFRIED BEANS
½ lb cooked beans (I use pinto or black)
¼ starchy water (add more to desired consistency)
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
½ tsp salt
¼ tsp pepper
⅛ tsp paprika
????Cook beans in instant pot using above instant pot bean recipe and reserve some starchy water
????Mash beans with a potato masher or fork (or use a blender if you like a super smooth consistency)
????Start by adding ¼ of starchy water until you’ve reached your desired consistency
????Add seasonings, stir and enjoy!
