How To make Memphis Pork Supper
Ingredients

each
potatoes, sweet
3
each
pork, shoulder, cubed
3
each
onions, sliced
4
each
apples, red, tart, cored, sliced into rings
2
tablespoon
sugar, brown
2
cup
apple, juice
2
teaspoon
salt
1
teaspoon
marjoram, crumbled
1/4
teaspoon
pepper
1
parsley, chopped
Directions:
Pare and quarter sweet potatoes. Trim all fat from pork; brown, a few pieces at a time, in a little of the trimmered fat in a large skillet. Remove with a slotted spoon and reserve.
Arrange potatoes around edge of slow cooker; place half of meat in middle. Top with layer each of half of the onion slices and apple rings; sprinkle with half the brown sugar. Repeat to make a second layer of meat and onion. Overlap remaining apple rings around edge, sprinkle remaining brown sugar over.
Combine apple juice, salt, marjoram and pepper in a 2 cup measure. Pour over apple rings, cover. Cook on low for 8 hours or on high for 4 hours, or until pork is tender.
Sprinkle with chopped parsley before serving.

Pulled Pork Pasta Casserole
We always struggle with what to do with all the left over pulled pork when we do a shoulder or butt. So this is one of my favorite ways to use up the left overs. It's my Easy Pulled Pork Pasta Casserole that is as tasty as it looks. Let me know what you think about this version and y'all enjoy.

Ingredients:
3-4 cups pulled pork
1 box of pasta cooked al dente
1/2 block of cream cheese at room temperature
1 can fire roasted green chilis
2 green onions diced, top and whites
2 cups shredded cheddar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon oregano
1 full can of fire roasted diced tomatoes including juice
2/3 - 3/4 cup favorite BBQ sauce
salt and pepper to taste
Cook your pasta to al dente
in large bowl combine the cream cheese, chilis, onions, 1/2 of the cheese and spices. Mix well to combine.
Add in the tomatoes and BBQ sauce and mix well
Now you can add the pulled pork and pasta and mix to combine.
Pour in a prepared 9x13 baking dish and sprinkle top with rest of the cheese.
Now bake at 350° preheated oven for 30-35 minutes

Pulled pork recipe: for between 8-12 lbs of pork
Spice Rub:
1/2 cup brown sugar
1/2 cup white sugar
6 tbsp paprika
2 tsp ground ginger
2 tbsp onion powder
1 tbsp garlic powder
1 1/2 tbsp kosher salt (I used rosemary salt)
1 tbsp chipotle powder
1 tbsp ground mustard
1 tbsp pepper
Chipotle BBQ sauce:
1 large onion
1/3 cup malt vinegar
1/2 cup apple cider vinegar
2/3 cup water
2 cup ketchup
2 1/2 tbsp molasses
6 oz chipotle
1/3 cup soy sauce
1/3 cup dark brown sugar
2 tbsp honey
1 1/2 tbsp onion powder
2 tsp garlic powder
pepper to taste
Coleslaw Dressing:
1 cup mayo
3 tbsp Apple cider vin
1 tsp celery seed
2 tsp sugar
1/2 tsp salt
1/2 tsp pepper

HOW TO MAKE PULLED PORK NACHOS
______________________________________________________________
WHAT YOU WILL NEED:
- Tortilla Chips
- Pulled Pork
- 1/2 red onion
- 10 pepperoncini's
- Shredded Cheese
- BBQ Sacue
- Postal Barbecue ORIGINAL BBQ Rub
STEP #1
To prepare your Nachos, first, gather all your ingredients. Start by slicing your red onions into thin bite-sized pieces. Also, slice your pepperoncini's. Once your toppings are cut begin to assemble your nachos beginning with tortillas on the bottom followed by your cheese. Next add on your pulled pork, onions, and pepperoncini's followed by a little bit of bbq rub and bbq sacue. Repeat this process with a second layer.
SETP #2
Once your nachos are put together place them on the grill opposite the coals and begin cooking them between 300F-350F until the cheese in the centre has melted to your liking.
STEP #3
After around 25 minutes your cheese should be good and melted and ready to remove.. Once off the grill top it with a little bit of cilantro and serve hot.
