Cowboy Chili Recipe!
We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings
Cowboy Chili
2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic
1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.
3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.
4. Serve warm with cheese, onions, sour cream, etc.

Ingredients:
For the meatballs:
600g (21.16 oz) minced beef
1 onion
1/3 bunch parsley
1 egg
1/3 cup (42g) dry bread crumbs
2 garlic cloves
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
For the sauce:
1 large onion
3 garlic cloves
1/2 red chili pepper (optional)
600g (oz) tomato sauce
3 tablespoons tomato sauce
600 ml water
7-8 basil leaves
Salt & pepper for taste*
1 tablespoon sugar?
Directions:
1. Finely chop onion and parsley. Crush garlic cloves. In a large bowl place the beef, chopped onion, parsley, crushed garlic, egg, bread crumbs and seasoning. Mix well with your hands until all combined.
2. Form into balls. In a large pan heat oil over medium heat. Fry the meatballs for about 1 minute for each side until lightly brown and remove from the pan.
3. For the sauce: chop onion, slice garlic cloves, chili pepper and basil.
4. In the same pan sauté onion for 4-5 minutes. Add sliced garlic and chili, sauté for 3-4 minutes more. Add tomato sauce, fill the empty tins of the tomato sauce with water (about 600 ml) and pour into the pan, add tomato paste, basil leaves, season with salt, pepper, paprika and stir.
5. Bring to sauce to a boil, transfer the browned meatballs to the sauce, reduce the heat to low and simmer, covered, for about 30-40 minutes. Serve.

I show you my take on how to make this addicting sauce. It's spicy, tangy, sweet, savory and hugs the meatballs very well. Super difficult to stop at just one skewer because of how delicious the sauce is!

INGREDIENTS
*Chili Sauce for Meatballs*
Tamarind Liquid (Tamarind Pulp - 2.5 tbsp + Hot Water - 2 cups)
Dried Guajillo Chili - 1 chili
Dried Spicy Red Chili - 1 heaping handful or about 45 chilis (I used Jinda Chilis)
Garlic - 16 cloves
Shallots - 7 small bulbs (chopped)
Palm Sugar - 1 cup (shaved, packed - roughly 80 g)
Shrimp Paste - 1 tsp
Salt - 1/2 tsp
MSG - 1 tsp
Fish Sauce - 1.5 tbsp
White Pepper Powder - 1/4 tsp
Shallot Oil - 2 tbsp
Crispy Fried Shallots - (3 small shallots sliced thinly + Vegetable Oil - 1/3 cup) - this will create shallot oil that is needed for this recipe
Corn Starch Slurry (Corn Starch - 1 tbsp + Water - 2 tbsp) - (in the video, I said to use 1.5 tbsp but 1 tbsp is enough)
