How To make Zucchini Meatball Stew
1 oz Ground beef
1/2 c Ground zucchini
1 t Onion
finely chopped
1 Egg
1/4 c Rice
ds Oregano, cumin, garlic salt ds Ground pepper 1 c Beef broth
1 lg Tomato :
diced
1 t Parsley -- chopped
1 tb Salt and pepper to taste
Combine ground beef, zucchini, onion, egg, rice, and seasonings; mix thoroughly. Shape into small meatballs. Combine beef broth, tomato, and parsley in saucepan; heat to boil. Drop meatballs into hot broth, one at a time. Cover and simmer 30 to 40 minutes. Add salt and pepper. Microwave: Cook beef broth, tomato, and parsley on High for 3 minutes, covered. Drop Meatballs into broth. Cook on High for 5 minutes. Hold 10 minutes. Add salt and pepper. Food Exchange per serving: 2 MEAT EXCHANGES + 1 VEGETABLE EXCHANGE + 1 STARCH/brEAD EXCHANGE CAL: 203

Ingredients for Zucchini & Meatballs Recipe:
Meatballs:
Ground beef: 500 – 550g
Parsley: ½ cup chopped
Fried onion: ½ cup
Dry mint (or fresh): 1 Tbsp
Ginger/garlic paste: 1 Tbsp
Red chili powder: 2/3 Tbsp
Cumin/coriander powder: 1 Tbsp
Turmeric powder: ½ Tbsp
Salt: to taste
Curry:
Zucchini: 8 – 9 medium
Potatoes: 3 – 4 medium
Onion: 1 large
White dry beans: 1 large cup (soaked & boiled)
Green chilies: 4 – 5 chilies
Tomatoes: 2 – 3 medium
Cilantro: ½ cup chopped
Tomato puree or crushed or paste: 3 – 5 Tbsp
Garlic paste: 1 Tbsp
Red chili powder: 1 Tbsp
cumin/coriander powder: 1 Tbsp
Garam masala: ½ Tbsp
Whole cumin seeds: ½ Tbsp
Black seeds (kalonji): ¼ Tbsp (optional)
Stock cubes: 2 cubes (optional)
Oil: 3 – 4 Tbsp
Salt: to taste

????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

Hearty Meatball Stew
Below is the recipe for Hearty Meatball Stew as well as a link to my video for the Foccacia Bread that I serve with my Stew.
Hearty Meatball Stew:
1 pound Ground beef
make a basic meatballs using:
Breadcrumbs
Eggs
Parmesan Cheese
Chopped Garlic and Onion
Worcestershire Sauce
Italian seasoning
Parsley
Salt and Pepper and any other spices to your taste
When your forming your meatballs:
Have some cubed up chunks of Cheddar Cheese
Place 1 cube of cheese in each meatball (roll)
and bake in the oven 350*
Approx. 30minutes or until done.
In the meantime in a large pot:
Saute in Olive Oil
1 Small chopped onion..then add chopped garlic
cook until onion start to get a nice color
1 can Tomato Soup
Add 2 cups water
1-2 tsp of Beef Base
Simmer to dissolve Beef Base
Add:
Thyme
Italian Seasonings
Parsley
Salt & Pepper
Add Baby Carrots
And Meatballs
Bring to a boil..lower to a simmer.,,.20 minutes
Add Cut up Potatoes
Adjust the seasoning to your taste
Also adjust the water and beef base.. if you use more potatoes or extra veggies you will need to add more liquid. Turn down to a simmer and cook until all the veggies are done.
Sometimes I will add celery, chopped fresh tomato's, zucchini, green beans- basically add any veggie that you like and cook until all veggies are tender.
Serve with fresh Parmesan cheese.
I also make my Foccacia bread with this..Any hardy bread will do. ENJOY!!

Parmigiana Di Melanzane Alla Napoletana ????
Ingredients
- 5 eggplant
- 1 brown onion, diced
- 4 cloves garlic, minced
- 200ml olive oil
- 600g tomato passata
- 3 balls mozzarella sliced
- 1/2 bunch basil
- 50g parmesan
Method
1. Start by heating up 2 tbsp of olive oil and a pot and sautéing your diced onion and garlic.
2. Add the tomato passata and cook out for 12-15 minutes.
3. Slice the eggplant lengthways and season well both sides with salt.
4. Place into a colander and set aside for 15 minutes, then pat and dry with a clean kitchen towel.
5. And a large fry pan heat up your oil and cook the eggplant slices in batches, so you don't overcrowd the pan.
6. In an oven safe casserole dish, start by spreading some of the tomato sauce, then add slices of the cooked eggplant to completely cover the bottom.
7. Next, add some of your mozzarella cheese, basil leaves and grated parmesan.
8. Continue layering until all your eggplant is used up, if you have some tomato sauce left over, pop it in the fridge and use it the next day as a pasta sauce.
9. Make sure the last layer is just parmesan.
10. Place on to 180°C oven for 25 minutes or until the cheese is golden and delicious. Enjoy!
