How To make Mean Lean Vegetable Chili

-(about 3/4 lb. total) -peeled and chopped 1 Large onion; coarsely choppe
-(about 1/2 lb.) 1 cn (28 oz.) tomatoes
1 cn (about 1 lb.) each black
-beans, pinto beans, and kid -beans (or 3 cans of 1 kind) 3 tb Chili powder
1/2 c Sour cream; (about) or
-unflavored yogurt -Crushed dried hot red chili In a 4- to 5-quart pan over high heat, combine carrots, onion, and 1/2 cup water. Stir often until liquid evaporates and vegetables begin to brown and stick in pan, about 10 minutes. Add tomatoes (break up with a spoon) and their liquid, beans and their liquid, and chili powder. Bring to a boil, then reduce heat and simmer, uncovered, to blend flavors, about 15 minutes. Ladle chili into wide bowls; add sour cream and crushed chilies to taste. Makes 6 to 8 servings. Per serving: 228 calories (17 % from fat); 4.3 grams fat, 863 mg sodium and 6.3 grams cholesterol. ~--

2 teaspoons olive oil
4 garlic cloves, minced
1 yellow onion, chopped
1 medium red bell pepper, chopped
1 pound extra lean ground turkey
1 can (28oz) diced tomatoes (diced)
1 ¼ cups poultry stock
2 (15oz) cans red kidney beans, rinsed and drained
1 can sweet corn, rinsed and drained
4 tablespoons chili powder
2 teaspoons cumin powder
1 teaspoon dried oregano
1 tablespoon cayenne pepper
Dash of salt & pepper to taste
TOPPINGS (OPTIONAL): cheese, avocado, jalapeños, sour cream

TURKEY + VEGGIE CHILI RECIPE
1 tablespoon extra virgin olive oil
1 small or ½ large onion, chopped
1 red bell pepper, chopped
3 cloves garlic, chopped
1.25 lb. extra lean ground turkey
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon oregano
1 (15 ounce) can low sodium diced tomatoes
1 (15 ounce) can kidney chili beans
3 cups low sodium chicken broth
2 zucchini, quartered and chopped
3 cups fresh chopped kale
Salt and pepper to taste
DIRECTIONS:
Heat oil in a large pot over a medium high heat. Add in onions along with a pinch of salt and sauté for 5 minutes or until fragrant.
Stir in garlic and peppers and cook for 5 more minutes. Add in ground turkey, chili powder, cumin, salt and pepper; breaking down the turkey with a spatula until you have small crumbles.
Once the turkey has turned from translucent to opaque add in the beans, tomatoes, and chicken broth and bring to a boil. Add in the zucchini and kale, turn down to a simmer and cook for another 10-15 minutes or until the veggies are tender.
Serve with your favorite chili toppings. Enjoy!

Lean & Clean (Day 2) - No Salt Vegan Chili
Food today was pretty good. I really enjoyed the mashed sweet potato with millet and the sweet mustard dressing was much better than I expected it to be. Win-win! The chili tasted just like chili that is whole food and no salt added should taste. It was absolutely fine but my palate is not yet adjusted to thinking no salt added foods are all awesome. Honestly, it seemed like it needed some salt. :)
