How To make Marzipan Cookies
1 c Buttter; softened
1/2 c Sugar
2 1/2 c Flour
1 ts Almond extract
Red-yellow-green food color DESCRIPTION: Beautifully decorated fruit miniatures made of a butter-almond dough. Cream butter and sugar. Stir in flour and almond extract until mixture looks like meal. Divide into 4 equal parts. Color one part of dough red, one green and one yellow and one orange. Shape cookies as described below. Preheat oven to 300 degrees. Bake 30 minutes or until set but not brown. RED DOUGH: Shape into apples and strawberries. APPLES: Form small balls. Insert a tiny piece of cinnamon stick into top as a stem and a whole clove in the bottom as the blossom end. For blush: Dilute a bit of red food color with water and brush over balls. StrAWBERRIES: Shape dough into small, heart-shaped balls. For texture, prick with the blunt end of a toohpick. Roll each berry in red sugar. Form stem and collar-like leaf with pieces of green dough. YELLOW DOUGH: Shape into Bananas and Pears. BANANAS: Shape dough into rolls, tapering ends. Flatten tops slightly to make plans of banana and curve each slightly. Paint on "stripes" with diluted green food color. PEARS: Shape dough into small pear shapes. Insert small piece of cinnamon stick in narrow end for stem, clove in bottom. Brush diluted red color on "cheeks." ORANGE DOUGH: Shape into Apricots and Oranges. APRICOTS: Shape dough into small balls. Make a crease down one side of each with a wooden pick. Insert a whole clove in each for stem. Brush with diluted red color. ORANGES: Shape dough int small balls. Insert whole clove in each for "blossom" end. prick all over with wooden toothpick to make skin textured. GREEN DOUGH: Shape into apples and green peas. APPLES: See directions for red apples. GREEN PEAS: Form dough into 1 1/2" rounds. Divide a rounded teaspoonful of dough into five small "balls" or "peas." Place "peas" in a row on each round, then fold up bottom half of round so "peas" are peeking out. Pinch ends together to secure. From Betty Crocker. -----

Die Marzipan Plätzchen sind super leckere Weihnachtsplätzchen die bei uns in der Weihnachtsbäckerei nicht fehlen dürfen.
Diese Weihnachtskekse sind ganz schnell und einfach gemacht.
Es ist ein ganz einfacher Knetteig und das ganz ohne Butter.
Bei uns werden ganz viele Plätzchen und Kekse in der Vorweihnachtszeit gebacken. Plätzchen backen bringt einen einfach in Weihnachtsstimmung
Und hier kommt das Rezept
Zutaten
200g Marzipan
80g Puderzucker
110g Mehl
100g gemahlene Mandeln
1TL Zimt
1 Ei ( Eigelb und Eiweiß trennen)
1 Prise Salz
Zum bestreuen Mandelplättchen
Der Teig reicht für 25 Plätzchen
Backzeit 10-15 Minuten bei
160 Grad Umluft im vorgeheizten Backofen
Küchenutensilien
1 große Schüssel
Küchenwaage
mehrere Schälchen
1 Gabel
Backblech
Backpapier
Zubereitung
Zuerst den Backofen auf 160 Grad Umluft vorheizen.
Das Marzipan über eine Reibe fein reiben.
Das Ei trennen und das Eigelb in ein separates Schälchen geben.
Zu dem Marzipan alle Zutaten außer das Eigelb und die Mandelplättchen dazugeben.
Das ganze mit den Händen in der Schüssel zu einem krümeligen Teig verarbeiten. Dann den Teig auf die Arbeitsfläche geben und mit den Händen kräftig durchkneten bis er schön kompakt und geschmeidig geworden ist.
Jetzt ein Backblech mit Backpapier auslegen und kleine Stücke vom Teig nehmen. Dann eine Kugel formen und auf das Backblech legen.
Jetzt die Gabel in Mehl wälzen und mit den Zinken die Kugel platt drücken.
So weiter machen bis das Backblech mit Keksen gefüllt ist.
Jetzt das Eigelb gut feeling is verquirlen und die Plätzchen damit bestreichen, dann die Mandelplättchen darauf streuen.
Plätzchen für 10-15 Minuten goldbraun backen.
Aus dem Ofen nehmen und sofort vom heißen Backblech ziehen und auskühlen lassen.
Nach dem auskühlen in einer Blechdose aufbewahren.

Recipe
Yield: Makes about 1 lb (450 g)
Prep Time: 20 minutes
Cook time: 5 minutes
Ingredients
1 ¾ cups (200 g) ground almonds (almond meal)
1 cup (200 g) granulated sugar (caster sugar)
¼ cup (60 mL) honey
2 Tbsp (30 mL) water
1 tsp (5 mL) pure almond extract
Directions
1. Place the ground almonds into a food processor. Stir the sugar, honey and water in a small saucepot over high heat until it reaches a full boil and the sugar has completely dissolved. Pour this into the food processor while it’s running. Add the almond extract and blend until the marzipan comes together. While it’s still warm, shape this into a log and wrap in plastic wrap well. Leave at room temperature to cool and store well-wrapped until you are ready to use it.
Marzipan will keep, well-wrapped, for up to a month, or can be frozen up to 3 months.
CHOCOLATE DIPPED MARZIPAN
Yield: about 4 dozen pieces (depending on size of cut-out shapes)
Prep Time: 20 minutes
Set Time: 20 minutes
Ingredients
½ recipe (225 g) homemade marzipan
1 ½ cups (270 g) dark or milk chocolate chips
icing sugar, for dusting when rolling
Directions
1. On a clean work surface, gently knead the marzipan to soften it, using a sprinkling of icing sugar as needed on the surface to keep the marzipan from sticking. Roll out the marzipan to about ¼ -inch (6 mm) thick and use a small cookie cutter (1 1/2–inches/40 mm is a nice portion) to cut out shapes. Place these on a parchment-lined baking tray.
2. Melt the chocolate in a metal bowl placed over a pot filled with an inch of barely simmering water, stirring gently until smooth. Remove the bowl from the heat and dip each marzipan piece into the chocolate half way and shake off excess chocolate before placing on the tray to set. Let the chocolate set (or chill for just 10 minutes) and then store in an airtight container.
The dipped marzipan will keep for up to 2 weeks in an airtight container.
