How To make Marzipan (Candies)
1 lb Almonds, shelled, blanched
1 lb Confectioners' sugar
1 ea Egg white, unbeaten
3 Or 4 Tbsp rosewater or
-orangewater Nothing expresses the German love of edible art more succintly than marzipan candies, which are shaped into piglets, cats, poodles, flowers, fruit and all sorts of other objects. They are delicious to eat, too. Carefully dry the shelled almonds, then grind to a powder in an electic blender, if you have one. Blend almonds, the sugar, the egg white and just enough rosewater or orangewater (available from pharmacies) to make a pliable stiff dough. Knead with fingers, then place on board dusted with confectioners' sugar and form into desired shapes, to resemble miniature apples, peaches, strawberries or, if you have an artist's touch, little pigs or birds. Tint with food coloring. Balls of marzipan may be rubbed in chocolate dots or colored sugar. If dough becomes too stiff, work in a little lemon juice, rosewater or orangewater, adding drop by drop. When candies are shaped, dry thoroughly in a cool, airy place for 24 hours, then wrap separately or place in a container (such as a little straw basket for fruit) and cover completely with Saran or other plastic wrap. ▶Homemade Marzipan◀
Almond Powder (or almond flour) 100g
Powdered Sugar 62g
Almond Extract 4ml (or kirsche)
Egg whites 15g
① Sift the almond powder/flour and powdered sugar.
② Add in the almond extract and egg whites.
③ Mix it well.
④ Combine everything together into a dough.
⑤ Wrap it well and store in air-tight container.
▶How to store◀
You must wrap it well with cling film and put it in an air-tight container. (or else it’ll DRY OUT) Store in the fridge up to 3 weeks (up to 2 months in the freezer). I know that shelf life is much longer for store-bought marzipan, but this is home-made so best to keep the shelf life short to be on the safe side.

Add water only if required. I never had to use any. The mixture does seem dry while kneading but gradually comes together as the cashew nuts releases its oils.
I've used gel pastes (Wilton/sugar flair) for the colours. Add colour acc to your preference. I've shown a light and dark version.
For the first tree I've used slightly bent scissors for the branches.
For the 2nd tree I used fine pearls also known as non-pareils. (Not sure why I typed the word dragees up there ????)
To store if not using immediately wrap the Marzipan in cling film (without colour) and keep it in the fridge. When ready to use bring it to room temp before using again.
This Marzipan can be made a couple of weeks in advance but personally I make, colour and shape it 5 days prior to Christmas eve and store it in a ventilated box at room temp(air tight box can make it sweaty) This recipe can also be used for molds.

How to make Marzipan Sweets - Sharing our Family Tradition

I am so excited to finally share with you how to make these adorable and delicious tiny marzipan sweets that we call ''Petits fruits'' which means tiny fruits, although we also make vegetables and potatoes haha !
This recipe is actually almost 60 years old, and my grandmother found it in a newspaper and it became a tradition in the family. She used to make hundreds of them and give them as precious gifts to family and friends, and my Dad, uncles and aunt would help her make them.
It was really magical to have my uncle Paul (the youngest of the family, just like me) come over with his wife, to show us the techniques he remembered from 25 years ago!
Here is the ingredients you will need for the recipe:
1 pound of almond paste/marzipan
⅓ a cup of corn syrup
1 jar of marshmallow fluff
2 teaspoons of vanilla extract (optional)
6 cups of powdered sugar
And some food coloring
As I say in this video, we filmed this in February 2020 just before the start of the pandemic so this was our last family gathering before everything and it was very special to edit this and see myself next to my parents without a mask or social distancing... I can't wait to live this way again and see my uncles and aunts again!
