Prepare for the NEW WW PROGRAM 2022
Lunch: once new plan starts, only points will come from rice and toppings
Fajita sheet bake-burrito bowl (corn, black beans, rice, lime)
Serves 5:
3 large chicken breast, fajita marinade
3 bell peppers,sliced
1 1/2 onion, sliced
1 1/2 tsp oil
Salt and pepper to taste
Bake veggies and chicken on 400 degrees for 25 mins or until meat is done. Remove meat and shred with beaters or in an electric mixer. Meanwhile, place pepper back in oven on broil for 5 mins.
Other bowl ingredients:
1/2 c black beans
Corn salsa (or plain corn)
Rice
Lettuce
Toppings like cheese, sour cream or salsa
Corn salsa:
1 can of corn, drained and rinsed
4 oz diced green chilis
1/2 jalapeño, diced
1/4 c red onion, dice
Juice of 1 lime
Salt and chili lime seasoning.
*cilantro and tomato if you like it
Mexican rice:
1 c of rice, rinsed and dried
1 tbsp oil
1/2 onion
2 garlic cloves
1 c water
1 tbsp bouillon
8oz tomato sauce
Heat oil in sauté mode in instant pot. Add rice and cook until just starting to golden, 3-4 minutes. Add onion and garlic and onion and cook another 3-4 minutes. Add remaining ingredients and cook on rice mode. Let naturally release for 10 minutes.

Shrimp and sausage bake:
INGREDIENTS
3 cups red potatoes diced
2 ears corn, cut into ½ slices crosswise
1 pound medium shrimp, peeled and deveined
1 12-oz. package turkey sausage,
sliced thinly
2 tbs. unsalted butter, melted
2 cloves garlic, minced
1 tbs. Old Bay Seasoning
1 lemon
1 tsp. garlic powder
Salt and pepper to taste
DIRECTIONS
Preheat oven to 425 F. In a large pot of salted boiling water, cook potatoes until just tender, about 10 to 15 minutes
Remove from pot and drain.
In a small glass bowl, place butter in the microwave and slowly melt in 10 to 15 second increments.
Place potatoes, corn, shrimp, sausage, melted butter, lemon and seasoning and toss to combine.
Distribute evenly on a large sheet pan, and bake until shrimp and corn are fully cooked through - about 15 minutes.
If vou like It a little toasted. broil on the sheet pan for the last 3 to 5 minutes

No other comfort food is much better than this. Healthy and packed with flavor. This soup is just screaming for a spoon. Great for what ails ya.

Healthy Red Lentil Soup with Chicken
Ingredients:
1 ½ cups chopped cooked chicken breast
1 cup lentils (rinsed in fine strainer)
1 sweet onion chopped
2 stalks celery – fine chop
1 TBS minced garlic
7 baby carrots small chop
15 oz, can diced tomato (drain ½ liquid off)
1 cup spinach cut up
1 Roma tomato diced
½ can of cannellini beans drained
1 TSP diced jalapenos
2 TBS tomato paste
2 dashes Worcestershire sauce
Salt & Pepper as you like
1 TSP Curry powder
1 TSP paprika
1 TSP Cayenne pepper
1 TSP Thyme
Large pot with Cooking spray
Instructions:
In sprayed pan over med-high heat, Saute onion, carrots, celery until soft
Add in garlic and jalapeno until garlic hits the nose
Add chopped fresh tomato, cook until warm
Add can of diced tomato and tomato paste
Mix in well and heat through
Add beans to the mix, then lentils followed by 3 cups of water
Bring to boil X5 minutes then reduce to low
Simmer until lentils double in size or are tender
When they are cooked you can leave as is or use an immersion blender to blend
Blend until ½ soup-like cream, mix well
Add in cooked chicken and fresh spinach
Add you spices as you like
When spinach is wilted, soup is done
Serve up in a bowl, Top with a dollop of sour cream or Greek yogurt
