Easy Marinated Mushrooms with Red Bell Peppers Recipe
Ingredients:
1/2 cup red wine vinegar
1/3 cup water
2 tablespoons corn oil
1 teaspoon white sugar
1 tablespoon chopped onion
1 tablespoon chopped fresh parsley
1/2 teaspoon dried basil
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 (16 ounce) packages fresh mushrooms, stems removed
1/2 red bell pepper, diced
Directions:
Combine the vinegar, water, oil, sugar, onion, parsley, basil, garlic, salt, and pepper; bring to a boil. Stir in the mushrooms and red bell pepper; return mixture to a boil; reduce heat and simmer until the mushrooms are tender, 5 to 10 minutes. Remove from heat and allow to cool to room temperature. Transfer to a covered container and store in refrigerator at least 4 hours before serving.

How To Make Marinated Mushrooms
INGREDIENTS:
1 pound small button or Bella mushrooms - cleaned
1 small jar rinsed pimento peppers
3/4 cup jarred drained pearl onions
2-3 tbsp. chopped fresh parsley
Dressing - OR can use favorite Italian, Greek or Vinagrette Dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar / red wine vinegar
1/4 cup finely diced red onions
3-4 cloves minced or sliced garlic
1 tsp. dijon mustard
2 tsp. brown sugar
1/2 tsp. dried oregano
1 tsp. whole black pepper corns
1/4 tsp. crushed red pepper flakes - optional
1 bay leaf
salt and pepper to taste
*Mix above ingredients and whisk well to combine
Clean mushrooms and place in salted boiling water. Cook for 3-4 minutes
until tender. Drain and cool to room temp.
In bowl mix cooled mushrooms, dressing, chopped parsley, drained pimentos
and pearl onions. Gently mix.
Place in lidded container and refrigerate for 8 hours or up to 3-5 days.
Serve at room temperature.
Enjoy.

Ingredients:
1 1/2 lbs white mushrooms (700 grams)
4 cups white vinegar (960 ml)
1 full tsp salt
1 lemon
Olive oil to fill the jars
4 or more cloves of garlic sliced
1 tbsp dried oregano
2/3 dried chili peppers (optional)
Directions:
Step#1-Wipe your mushrooms with a wet paper towel to remove any soil or quickly rinse them. Do not have them sit in water.
Step#2-Bring the vinegar, juice of lemon, and salt to a boil, add your mushrooms.
Step#3-Cook for about 2/3 until tender not too soft as they need to still have a bit of a bite.
Step#4-Dry and cool on a paper towel or clean kitchen towel.
Step#5-Wash and boil your glass jar for at least 5 minutes. Dry and set aside.
Step#6-Once mushrooms and jars are cooled add your mushrooms, garlic, oregano, and peppers.
Step#7-Mix and add your oil and make sure they’re submerged in the oil.
Step#8-Seal the jar and store in your refrigerator.
Step#9-When you eat the mushrooms make sure you add more oil to the top.

Marinated Mushrooms in just 7 Minutes!
Ingredients:
Mushrooms - 500 grams
Onion - 1 piece
Garlic - 3 cloves
Carrot - 1 piece
Sunflower oil - 1 tablespoon
Salt - 1 teaspoon
Sugar - 2 teaspoons
Vinegar (9%) - 3 tablespoons
Instructions:
Rinse the mushrooms, cut the onion into half rings, grate the carrot finely, slice the garlic.
Add sunflower oil, salt, sugar, and vinegar to a pot.
Add the mushrooms to the pot, followed by onion, garlic, and carrot. Mix well.
Bring to a boil and simmer for 7-10 minutes.
After cooling, refrigerate overnight.
The marinated mushrooms are ready! Pickled Mushrooms / Poplar Fieldcap

This mushroom pickling was a first time for me, kind of like an experiment and it was a success :)
I used the following ingredients:
- 2.355 Kg of Mushrooms, Poplar mushroom in my case
1 L of water in which I put
- a handful of garlic cloves ( around 5-6 )
- a teaspoon of mustard seeds
- a teaspoon of coriander
- a teaspoon of white pepper
- a teaspoon of black pepper
- a teaspoon of Red pepper
- four bay leaves
- a teaspoon of dry dill
- a piece of fresh rosemary
- two tablespoons of sea salt
- six tablespoons of vinegar
