How To make Maple Macadamia Bread
1 1/4 c All purpose flour
1 c Whole wheat flour
1 t Baking powder
1 t Baking soda
1/8 ts Salt
1 lg Egg, lightly beaten
1/2 c (1 stick) unsalted butter,
-melted, cooled 3/4 c Maple syrup
3/4 c Buttermilk
1 c (5 oz) macadamia nuts,
-coarsely chopped Maple Cinnamon Glaze
Heat oven to 350. Butter and flour a 9 x 5 in. loaf pan. Mix both flours, baking powder, baking soda, and salt in mixing bowl. Whisk egg, butter, syrup and buttermilk in separate large mixing bowl until blended. Add flour mixture and stir just until smooth. Fold in nuts. Pour into prepared pan. Bake until wooden pick inserted in center comes out clean, 40-45 minutes. Cool in pan on wire rack 5 minutes. While bread is cooling, make Maple Cinnamon Glaze. Turn bread out of pan onto rack. Brush top and sides with syrup glaze, using pastry brush. Let stand 5 minutes, then sprinkle top evenly with cinnamon sugar. Let cool completely before serving. Cut bread into 1/2 inch thick slices. Macadamia Nut Pie
Recipe
Ingredients
Shortcrust pastry*
Filling:
3 eggs
1½ cups halved macadamia nuts
1 cup maple syrup
¼ cup melted coconut oil
1 tablespoon vanilla extract
Directions
Pre-heat oven to 350°F, 180°C, 160°C fan, Gas Mark 4.
Roll pastry.
Place pastry to pie dish.
Fill pie shell with nuts.
In a small bowl, beat the eggs, maple syrup, coconut oil and vanilla.
Pour mixture into pastry shell.
Bake for 45-50 minutes.
Allow to cool.

Macadamia Blondies with Caramel Maple Topping
Kimberly Vela is an alumni and grad student at St. Mary's University. Being a vegetarian for six years, Kim learned how to cook for herself and loves to share her recipes with her friends.
Ingredients
2 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
6 ounces firm silken tofu
¼ cup rice or soy milk
1/3 cup canola oil
2 cups sugar
2 tablespoons vanilla extract
1 ¼ cups raw macadamias, partially chopped and partially ground
Ingredients for the topping:
¼ cup nonhydrogenated margarine
2 tablespoons turbinado or other brown sugar
¼ cup pure maple syrup
1 cup raw macadamia nuts, coarsely chopped
Directions
Preheat oven to 350F. Grease 9 X 13 inch pan. In blender or food processor, blend tofu and soy milk until smooth. Add oil, sugar and vanilla, blend. Combine the dry ingredients in mixing bowl, mix well. Fold in nuts. Dough will be thick. Spread in baking pan, bake 25 minutes.
Prepare topping: Mix all ingredients except nuts in saucepan. Heat until sugar dissolves. Increase heat, bring to boil 1 minute. Stir in nuts, remove from heat. Remove blondies from oven, pour on topping, bake 10 more minutes. Let cool completely before serving.

Macadamia Nut Milk Recipe:
1) Add 1 cup of macadamia nuts to a bowl
2) Pour 1 cup of filtered water into the same bowl
3) Add a pinch of sea salt
4) Soak for at least 2 hours
5) Take your soaked nuts and pour them into a blender or food processor
6) Add 3 cups of filtered water
7) Add another pinch of salt
8) Blend it up
9) Enjoy! No straining or peeling required
