How To make Macaroni& Red Bean Soup
1 c Red kidney beans, soaked
1 ea Onion, coarsely chopped
1 md Carrot, diced
2 ea Celery stalks, chopped
3 ea Garlic cloves, chopped
1 tb Parsley, chopped, optional
2 tb Olive oil
1 1/4 c Tomatoes, diced
1 c Tomato juice
1/2 ea Vegetable bouillon cube
8 oz Elbow macaroni
1 tb Tomato paste
1 t Mixed herbs
Salt & pepper
Cook beans until tender. Cool in their cooking liquid. Lightly saute the onion, carrot, celery, parsley & garlic in the olive oil until softened & slightly browned. Ladle in the beans & 2 cups of their cooking liquid, the tomatoes, tomato juice bouillon cube & macaroni. Bring to a boil & cook for 5 to 7 minutes. Stir carefully. Cover & let stand for a few minutes to allow the pasta to plump up. Add more stock or juice if the mixture is too dry. Stir in the rest of the ingredients & serve immediately.

Super easy, quick, & cheap but SO good. Macaroni and tomatoes with bacon and onions is so simple but the flavors go together so well. Easily add some ground meat and smoked sausage, turn it into a goulash. This can be a side dish or stand alone.
Macaroni & Tomatoes
1 lb cooked elbow macaroni
2 cans petite diced tomatoes
1 small onion chopped
5 pieces of bacon
Salt & pepper
1 tsp sugar
Fry bacon til crispy. Add onions & sautee. Add tomatoes, sugar & seasoning. Bring to a boil. Reduce heat. Cover & let simmer for 15 minutes. Combine with cooked noodles.

1 tbsp olive oil
1 medium onion chopped
3 cloves garlic minced
2 15 oz cans diced tomatoes or 800 grams fresh tomatoes
1 tsp dried oregano
3/4 tsp onion powder
1/2 tsp dried basil
Salt and pepper to taste
2 heaped tbsp tomato paste
3 cups (720 ml) vegetable broth or water
7 oz (200 g) dry pasta
1/4 cup (60 ml) dairy-free heavy cream or canned coconut milk/cream

HOW TO MAKE “OLE SKOOL” SOUTHERN BAKED MAC N CHEESE!!!
Ingredients:
32 0z chicken stock (or more depending on how much you’re making)
3 1/2 cups elbow pasta
8 cups of cheese of choice
2 cups whole milk
1 1/2 cup heavy cream
3 eggs
3/4 cup sour cream
Seasonings such as paprika, salt , pepper ( taste as you mix and adjust the seasonings! )
1 stick of butter ( plus a little
More to grease the pan)
Notes* only cook the pasta until it still has a little bite to it about 7-8 minutes .. the pasta will continue to cook once it is placed in the oven to bake *
