NAWABI DAL
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Cooking Dal
1 tbsp Ghee, घी
2-4 Garlic cloves, chopped, लहसुन
1 cup Chana dal, soaked, चना दाल
1 cup Moong dal, soaked, मूंग दाल
1 cup Urad dal, soaked, उड़द दाल
1 ½ cups Milk, दूध
1 Green cardamom, हरी इलायची
2 Cloves, लौंग
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
For Tempering
2-3 tbsp Ghee, घी
1-2 tsp Oil, तेल
1 tsp Caraway seeds, शाही जीरा
2-3 Garlic cloves, chopped, लहसुन
3 medium Onions, finely chopped, प्याज
½ inch Cinnamon stick, दालचीनी
¼ tsp Asafoetida, हींग
1 tsp Turmeric powder, हल्दी पाउडर
¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
½ cup Curd, beaten, दही
1 tbsp Coriander leaves, chopped, धनिया पत्ता
½ tbsp Mint leaves, chopped, पुदीना के पत्ते
3-4 cups Cooked dal, पकी हुई दाल
⅓ cup Water, पानी
Salt to taste, नमक स्वादअनुसार
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
1 Green chili, slit into half, हरी मिर्च
For Garnish
½ tsp Ghee, घी
A pinch of Black peppercorns, crushed, कुटी हुई काली मिर्च
A pinch of Nutmeg, जायफल
Fried Onions, तले हुए प्याज
Fresh cream, ताजा क्रीम
Coriander sprig, धनिया पत्ता
Process
For Cooking dal
In a pressure cooker, add ghee, once it's hot, add garlic and it saute for a minute on moderate heat.
Add chana dal, urad dal, moong dal and saute for 2-3 minutes on moderate heat.
Add milk, green cardamom, cloves and get a quick boil.
Add water, salt to taste and mix it well, cover it with the lid and cook it to 3-4 whistles.
For Tempering
In a handi or kadai, add ghee, oil, once it’s hot, add caraway seeds and let it splutter.
Add garlic, onions and saute for 4-5 minutes or until golden in color on moderate heat.
Add cinnamon stick and saute well.
Add asafoetida, turmeric powder, degi red chili powder, coriander powder and cook it well.
Add curd and saute well, add coriander leaves, mint leaves, cooked dal and mix it well.
Add water as required, salt to taste, black peppercorns and let it simmer for 4-5 minutes on moderate heat.
On a gas flame, heat the golden ring and drop into dal for smokiness and give it gold essence into it.
Serve in a serving bowl, garnish it with ghee, black peppercorns, nutmeg, fried onions, fresh cream, coriander sprig.
Serve hot with roti.

Lucknowi dal is a very easy and simple recipe. It turns out rich and creamy. This can be a good alternative to your regular dal. This is a little different recipe and a secret ingredient that we are adding to it that enhances the taste of the dal. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Tur dal
• 1 1/5 cup Water
• 1/2 tsp Turmeric powder
• 2~3 finely chopped Green chilies
• Salt to taste
• 1/2 cup Milk
• 2 tsp Ghee
• 1/2 tsp Cumin seeds
• Finely chopped Garlic
• A pinch of Hing
• 2~3 dry Red chilies
Method:
• Wash dal really good 3-4 times with water and add water, turmeric powder, green chilies.
• Mix well & close the lid of the cooker.
• Cook on medium heat until 3-4 whistles.
• Open the lid and beat the dal really good.
• Transfer the dal into a kadhai and add salt and mix well.
• Bring it to boil.
• When dal boils well add milk and mix well.
• For tadka, heat up ghee in a tadka pan.
• When ghee is hot enough turn off the gas and add cumin seeds and let it splutter.
• Add garlic, hing and mix well.
• Add dry red chillies and mix well.
• Transfer the tadka on dal and mix well.
• Dal Lucknowi is all ready.

Lucknowi Dal or Sultani Dal is a nawab Lentil recipe which is of Mughal origin. The dal is cooked along with rich ingredients which gives it a truly Royal feel.
Lucknowi dal is a special dal recipe from the heartland of ancient Awadh. This special Awadhi recipe has the fragrance of Lucknowi spices. Like everything else in Lucknow, the special Lucknowi dal too has its own characteristic flavour. Although it is a lot like dal tadka, the Lucknowi dal is still a distinct dal recipe that tastes different and is cooked very differently. The main element of difference in this Awadhi recipe Lucknowi Dal is the addition of milk to the dal. The Lucknowi dal is traditionally made with Toor dal so do not try any changes here. It is a dal recipe that can be prepared very quickly so can be made when you are in a hurry.

Ingredients:
For Dal
1/2 cup Split Pigeon Peas (soaked)
1 1/2 cups Water
3 Green Chillies Chopped
1 tsp Salt
Turmeric Powder
For Tadka (tempering)
Ghee
Asafoetida
2 Cinnamon Sticks
Bay Leaf
1 tbsp Cumin Seeds
Dried Red Chillies
1 tbsp Garlic (chopped)
1/2 cup Milk
Garam Masala Powder
Coriander Leaves (chopped)
Fresh Cream
Method: Let's start with adding Split Pigeon Peas (soaked) in the Cooker with Water, Green Chillies Chopped, Salt, Turmeric Powder. Next, mix it together properly, then close the Cooker Lid and cook it for 3 whistles. After 3 whistle Dal is ready to keep it aside and let's make Tadka (tempering) for the dal. Next add Ghee in the Pan, after ghee is getting hot add Asafoetida, Cinnamon Sticks, Bay Leaf, Cumin Seeds, Dried Red Chillies saute for few moments then add Garlic (chopped) now saute again for few minutes. Next, open the Cooker, shake it properly and add the Tadka (tempering), Milk. Now let the Dal cook for 2-3 minutes, then add Milk again. Stir the dal a little then add Garam Masala Powder, Coriander Leaves (chopped) mix it properly. Now turn off the Flame, add Fresh Cream on top of it and your Lucknowi Dal is ready to serve.

Ingredients-
1 cup soaked split pigeon peas (toor/arhar dal) ( soak for 45 minutes - 1 hour )
1/2 tsp turmeric powder
Salt to taste
water as required
1 tsp green cardamom powder
1/2 tsp clove powder
1 tsp black cardamom powder
1/2 cup yogurt
1/2 cup fresh cream
1/2 cup milk
For smoking-
1 tdp ghee
3-4 cloves
For tempering-
2 tbsp ghee
7-8 cloves garlic finely chopped
1 finely chopped onion
1 tsp finely chopped ginger
2-3 dried red chilies
1 green chili slit
1 tsp cumin seeds
A pinch of asafoetida
Process -
Wash the toor dal well , Soak for 45 minutes to 1 hour.
In a nonstick kadhai or handi add the soaked dal , add the turmeric powder, salt to taste, water, mix, cover, cook on a low flame till dal is nice and mushy. Once dal is cooked mash it with the help of a ladle, in a bowl add yogurt, fresh cream, milk , mix well , add it into the dal, mix well , add green cardamom powder, clove powder, black cardamom powder, mix , let the dal simmer , meanwhile on another flame heat the charcoal, place a small aluminum foil bowl on top of the dal, place the charcoal piece on it, drizzle the ghee, add cloves, cover, let the flavour infuse for 2-3 minutes. meanwhile heat the ghee in a pan, add asafoetida, cumin seeds, dried red chilies, garlic, onions, ginger, give a stir, add slit Green chili, cook till onion and garlic turn light golden in color. open the lid , remove charcoal, add the tempering, mix well, off the flame, remove the dal into a serving bowl, garnish with fresh cream, mint sprig, serve hot.
