How To Make The Best!! Skillet Chicken with White & Wild Rice
A casserole recipe with Chicken, White and Wild Rice - Wild Rice!!!! This stuff is so good - no - It’s GREAT! The combination in this chicken dinner recipe makes a super tasty and easy one pot meal that will blow you away.Better than tray bake chicken by a mile.

Ingredients:
½ cup (80g) wild rice
6 bone in skin on chicken thighs
Salt and pepper
1 Tbsp (15 mL) olive oil
1 or 2 shallots (about 50g)
1 stalk celery
1 small carrot (about 100g)
12 ounces (350g) mushrooms
2 cloves garlic
1 cup (185g) long grain rice - basmati
1 tsp (5 mL) dried thyme
3 cups (750 mL) chicken broth
Method:
Preheat oven to 350ºF (180ºC)
Place wild rice in a heat proof bowl and cover with boiling water.
Season the chicken on both sides with salt and pepper.
Brown chicken on both sides in an oven proof pan or braiser over high heat, with a splash of oil.
While chicken browns, dice the celery, carrot, and mushrooms.
Mince the shallot.
Transfer browned chicken to a plate.
In the same pan; sauté the celery, carrot, shallot, and mushrooms until translucent.
Stir in the basmati, and drained wild rice.
Stir in the thyme, and continue to cook for 2-3 minutes.
Stir in the chicken stock and bring to a boil.
Return the chicken to the pan, skin side up and then transfer to oven.
Bake for 35 - 40 minutes or until chicken is cooked through.

1 red bell pepper

AP seasoning
1/2 packet Sazon
Italian seasoning
1 tsp chicken base
1 tbsp garlic
2-3 tbsps flour
1 cup chicken broth
2 cup heavy cream
2 cups Colby Jack
1 cup grated Parm
2 cups cooked broccoli
4 cups diced chicken
1/4 cup diced parsley

Chicken & Wild Rice Casserole
6 ounce Box Near East Long Grain & Wild Rice
1 Spanish Onion, large & chopped
1 Cup Celery, chopped
Pint Container of Button Mushrooms, washed and thick sliced
2 teaspoons Fresh Thyme
2 Tablespoons Olive Oil
1 Can Cream of Mushroom Soup
½ Cup Sour Cream
2 Tablespoons Apple Cider Vinegar
¼ Cup of Chicken Broth
¾ teaspoon Curry Powder
2 Cups Cooked Chicken Breast, cubed
¼ Cup Parsley, chopped for garnish
1.Preheat oven to 350°F, spray a 9x13 qt baking dish with non-stick cooking spray.
2. In a medium size saucepan cook rice according to instructions on the box, set aside.
3. In a large saucepan, heat olive oil and saute onions until light golden, add celery and stir with a wooden spoon until tender, add mushrooms and thyme, cook for 5 minutes.
4. Combine the mushroom soup, sour cream, chicken broth, curry powder and apple cider vinegar, stir in the chicken. Spread into the prepared pan and cover with tin foil. Bake for 30 minutes.
Rest 10 minutes before serving. Use a serving spoon and serve into a bowl, garnish with parsley.

Original Recipe
6 Chicken bone in Breast
1 cup water pinch of thyme
1 tsp. curry powder
2 cups of sherry
1 tsp. salt and pepper
1/2 tsp. basil
Mix ingredients together and pour over the breast and bake at 325 for 1 1/2 hours
Remove chicken from bones, reduce the liquid in pan 1/2 cup
1-pint sour cream
1 dried onion soup mix envelope
1 1/2 cups wild rice or use one box of bens cooked
Mix all together with chicken and bake at 325 for 30-40 minutes
New Way is SOOO MUCH Easier!
1 lb. of chicken breast cut into small pieces
1 box of wild rice
1 1/2 cup water
1/2 cup sherry
1 tsp. curry
1/2 tsp. basil
1-pint sour cream
1 onion soup mix envelope
Put rice in a pan, add water, sherry, curry, and basil, and mix well. Add sour cream and onion soup mix and mix well. Put chicken on top of the mixture. cover with tin foil and bake at 350 for 40-50 minutes until rice is tender and chicken is cooked.
