GARLIC BUTTER LEMON PEPPER LOBSTER TAILS

Ingredients
- 6 lobster tails
- 5 tablespoons salted butter
- 2 tablespoons minced garlic
- 1 table spoon lemon pepper
- 1 table spoon sugar
- 200ml blended coconut water (blend 200ml coconut water with a 1/4 cup of garlic cloves)
- Optional 1/8 teaspoon msg
Optional garnish: chopped parsley
1. Prepare/clean your lobster
2. Add butter to a small pot or pan on medium low heat. Melt the butter then add minced garlic. Fry on low until fragrant
3. Add the lemon pepper and sugar continue to fry for another minute
4. Next add the blended garlic coconut water. Simmer and reduce by a quarter.
5. Taste to adjust the seasoning
6. Brush the sauce on the lobster then bake at 400 degrees for 15-20 minutes. Cook time will vary feeling on the size of your lobster
7. When it’s done remove, brush with Elmore sauce and garnish with parsley

Although we don't really have this dish in Singapore with the exact same name, we do have somewhat similar dish - usually cooked with egg tofu or with kway teow (flat rice noodles). Thanks to one of our viewers, we decided to show you how Roland cooked this dish at home.

250g of prawns
1 teaspoon of sugar
1/2 teaspoon of baking soda
1 bowl of ice water
Other ingredients

6 slices of young ginger
2 cloves of chopped garlic
Prawn heads
750ml of water
1/2 cup of mixed vegetables
1/2 teaspoon of chicken stock powder
1.5 tablespoons of light soy sauce
1/2 teaspoon of sugar
1/2 teaspoon of salt
A few dashes of white pepper
Some cornstarch solution
1 tablespoon of Chinese cooking wine
1 beaten egg
1/2 teaspoon of sesame oil

How to Make Shrimp with Lobster Sauce
Ingredients: (1 serving)
26/30 Shrimps: 6 or 7 pieces
Peas and carrots: 1/4 cup or 60 g
Baking soda: 1/8 tsp
Water: 1/2 cup
Salt: a pinch and 3/4 tsp for sauce
Garlic powder: sprinkle
White pepper: sprinkle
Sugar: 3/4 tsp
Chicken powder: 1/2 tsp
Egg: 1 (white only)
Unsalted chicken stock or water: 1 cup
Corn starch: 1 tbsp
Veg. Oil: 2 tsp
Green onion: a little bit (optional)
Potato starch: 1 tbsp
Wine: 1 tbsp (optional)
Sesame Oil: 1/8 tsp

Lobster Cantonese - Lobster with lobster sauce recipe (No deep frying!)
Lobster Cantonese has gone out of favor since Bill's younger days growing up in the Catskills, but it is really delicious and deserves a comeback! Back in the day, when Bill's father worked at Chinese American restaurants that served lobster on both the American and Chinese sides of the menu, the go-to way to cook a Chinese-style lobster dish was this Lobster Cantonese in lobster sauce.
If you’re familiar with shrimp with lobster sauce, you know what I’m talking about. The name of that sauce had to come from somewhere, you know!!

160g (6oz) Peeled and Deveined Shrimp ( I had 12 pieces of shrimp)
1 Cup Mixed Peas and Carrots
3/4 Chicken Stock + 1/4 Cup Water
