How To make Live Well: Pasta E Fragioli
1 tb Olive oil
1 Onion, chopped
2 Garlic cloves, minced
28 oz Canned tomatoes
38 oz Canned white kidney beans
2 c Vegetable stock
1/4 c Sun-dried tomatoes, slivered
1/2 ts Dried basil
1/2 ts Dried oregano
1/4 ts Pepper
1/2 c Elbow macaroni
1/4 c Parmesan, freshly grated
In large heavy saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring for 3 minutes. Add tomatoes to saucepan, breaking up with spoon. Drain and rinse beans; add to saucepan along with stock, sun-dried tomatoes, basil, oregano and pepper. Bring to boil; reduce heat, cover and simmer for 20 minutes. Stir in pasts; return to boil. Reduce heat; cover and simmer for 10 minutes or until pasta is tender. Sprinkle with Parmesan. AUTHENTIC PASTA E FAGIOLI - Grandma's Recipe
Pasta e Fagioli or Pasta Fazool is probably my number 1 comfort food recipe. There are a ton of ways to make an authentic bowl of Pasta Fagioli but I'm going to show you one of the simplest and IMO best ways to make it! At its core, this recipe is small pasta and beans (cannellini or borlotti are most often used), a touch of tomato, garlic, and some fat from lard or olive oil. If you have Parmigiano Reggiano rinds throw them in the pot to enhance the flavor even more. I hope you enjoy this pasta fazool recipe!

Pasta e Fagioli is a classic dish in Italian cuisine. A first course with an unmistakable flavour that has its roots in the rural tradition; pasta e fagioli is a poor, cheap dish, using short pasta and beans, but is extremely tasty and genuine. This is timeless Italian comfort food that warms the heart, in my recipe we will make the best pasta fagioli with Nonna Igea, who will share how to make homemade sagne – a very old pasta form, from where my Nonna was born.
INGREDIENTS
For the Dough:
500g/17.6oz flour
1 egg
Water
For the Sauce:
Carrot (chopped into small cubes)
Onion (chopped into small cubes)

White beans (approx 50g/1,7oz – 60g/2,1oz per person)

Copycat Olive Garden Pasta e Fagioli Soup Recipe | Copycat Olive Garden Recipe
INGREDIENTS:
1 pd. lean ground beef
1 cup dry Ditalini pasta
1 cup diced yellow onion
1 cup diced celery
1 cup diced carrots
1 diced, rinsed and drained leek
3 cloves minced garlic
4-5 cups chicken broth
1 - 14 oz. can diced tomatoes with juice
2 Tbsp. tomato paste
1 - 14 oz. can rinsed and drained white northern beans
1 - 14 oz. can rinsed and drained red kidney beans
1/4 tsp. salt plus to taste
1/4 tsp. black pepper plus to taste
2 tsp. sugar
1 tsp. oregano
1 tsp. basil
3/4 tsp. thyme
2 Tbsp. parsley - divided
In a soup pot on medium high heat add ground beef, cook and chop until no longer pink.
Drain excess fat if needed.
Add onions, celery, carrots, leek, salt and black pepper.
Cook and stir 3-4 minutes.
Add minced garlic and tomato paste. Cook and stir for 1-2 minutes.
Add tomatoes with juice and chicken broth.
Turn heat up to bring to simmer.
Add seasonings, bring to simmer, cover and cook for 10 minutes.
Add beans, stir, bring back up to simmer, cover and cook for 15 minutes.
Add Ditalini pasta and stir. Bring to simmer and cook for 10 minutes or until pasta is done.
Turn off heat. Add another Tbsp. of parsley and grated cheese. Stir to combine.
Serve and enjoy.
