How To make Live Well: Rosemary Chicken
1/3 c Low-fat plain yogurt
1 ts Dried rosemary, crumbled
1/2 ts Grated lemon rind
1 c Fresh bread crumbs
1/4 ts Salt
1/4 ts Pepper
4 Chicken breasts, boneless,
-skinless In shallow dish, stir together yogurt, rosemary and lemon rind; set aside. in separate shallow dish, combine bread crumbs, salt and pepper. Dip each breast into yogurt mixture, then into bread crumb mixture to coat. Place on greased baking sheet; bake in 350F 180C oven for about 20 minutes or until chicken is no longer pink inside. broil for 2 minutes or until golden brown. SUPER EASY ROSEMARY LEMON CHICKEN | HEALTHY, FAST, DELICIOUS
Here are the ingredients :
2 chicken breasts
some lime juice or lemon (here I'm using lime bc it is cheaper than lemon here in asia)
3-5 cloves of garlic
some shallots
1/2 tsp of dried rosemary, thyme, parsley
1tsp of paprika powder, curry powder
salt and pepper
Step 1: mince the garlic and shallots. ( At this stage you can certainly add more garlic or shallots to your own preference) ;)
Step 2: mix the dried herbs and spices together till well combined.
Step 3: butterfly the chicken breasts.
Step 4: rub the spice mixture on both side of the chicken
Step 5: in a pan under medium heat, add some oil and cook each side for approximately 5 minutes or until it's golden brown and crispy and fully cooked.
Step 6: add in the garlic and shallots half way of the cooking process.
Step 7: you are done. enjoy with a little steam rice and lemon juice~

My wife is a great cook and when time is tight she will just grab some chicken and herbs from our garden for something easy. Here is one of her favorites;
ROSEMARY CHICKEN
Prep time 5 minutes
Cooking time 20-25 minutes
Ingredients
3-5 lbs boneless, skinless chicken
2 cups rosemary sprigs washed
4 cloves garlic
1 cup cooking sage
1/2 cup flat leaf parsley
2 tbsp olive oil
2 tsp black pepper

Garlic & Rosemary Chicken #shorts

Serves: 4
4 garlic cloves
2 pinches sea salt
2 tbsp olive oil
4 chicken breast fillets
3 rosemary sprigs
Zest of 1 lemon
25g butter
500g cherry tomatoes
500g fresh gnocchi
Handful of basil leaves, plus extra to serve
Grated pecorino, to serve
Sea salt & freshly ground black pepper
1. Mash the garlic cloves on a chopping board with the sea salt until a rough paste forms. Add the chicken fillets to a large bowl with 1 tbsp of the olive oil, the garlic paste, rosemary sprigs and lemon zest. Toss to fully coat the chicken.
2. Heat the remaining olive oil in a non-stick frying pan, add the chicken breasts and brown over a high heat for 2 minutes on each side until golden.
3. Push the chicken breasts to one side of the pan and add tomatoes to the pan with the butter. Cook, stirring, until the tomatoes start to soften, then reduce the heat and cook for 10 minutes until the chicken is cooked through and the tomatoes have reduced down slightly. Using a fork, burst some of the tomatoes to bring out some of their juices for the sauce.
4. While the chicken cooks bring a large saucepan of salted water to the boil and add the gnocchi. Cook for just a minute or two until they float to the surface, then remove them with a slotted spoon and add straight to the chicken pan, with the basil leaves.
5. Serve the chicken and gnocchi in wide bowls garnished with basil leaves and pecorino.

INGREDIENTS
7 large chicken thighs
Oil for frying
Marinade:
1 garlic head, peeled and crushed
6 fresh rosemary sprigs, stems removed and chopped
1 teaspoon red pepper flakes
1 teaspoon kosher salt
½ cup lemon Juice
⅓ cup olive oil
Chimichurri:
½ cup parsley, chopped
1 garlic clove, pressed/finely minced
¼ cup olive oil
2 teaspoons kosher salt
1 teaspoon red pepper flakes
Juice from 2 lemons, halved and grilled
Step 1
Combine all the marinade ingredients in a large bowl and blend until smooth. Add in the thighs and coat them well. Cover the bowl and refrigerate for 12-24 hours.
Step 2
Combine all the chimichurri ingredients in a container and refrigerate until needed.
Step 3
Heat up oil in a frying pan over medium-high heat. Place the thighs skin-side down and render the fat for 20-25 minutes.
Step 4
Flip over and sear the other side for another 5 minutes. Remove from the pan and let the thighs cool off on a rack or a plate for 5 minutes and serve with your favorite side dish.
