Shrimp and Crab Au Gratin - Blast From the Past
Paula's making meals to warm you right up when the weather gets chilly and today's meal is Shrimp and Crab Au Gratin. Enjoy Y'all!
Ingredients:
1/2 cup butter
1/2 cup all purpose flour
1/2 cup whole milk
1/2 cup dry white wine
1 juiced lemon
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 lb small or medium peeled and deveined shrimp
1 lb picked through for shell claw crabmeat
1 1/2 cup grated sharp cheddar cheese
Preparation:
1.) Melt the butter in a heavy-bottomed saucepan over very low heat.
2.) When the butter is completely melted, stir in the flour with a wooden spoon.
3.) Cook for about 1 minute over low heat, stirring constantly.
4.) Slowly add the milk.
5.) Using a whisk, stir briskly until you have a smooth sauce, about 2 minutes.
6.) Add the wine, lemon juice, salt, black pepper, and cayenne and whisk again.
7.) Switch to the wooden spoon and keep stirring the white sauce until it is completely smooth and thickened, about the consistency of mayonnaise. Remove from the heat.
8.) Bring 2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan and add the shrimp.
9.) When the water returns to a boil, cook the shrimp for 1 minute.
10.) Drain immediately. Roughly chop the shrimp and put in a large mixing bowl.
11.) Add the crabmeat and, with your hands, toss gently to mix.
12.) Pour the sauce over the seafood. With a large spoon, gently combine, taking care not to break apart the crabmeat.
13.) Spray an 8-inch square disposable aluminum foil pan with vegetable oil cooking spray (there will be a little left over for a tasty lunch for the cook) or use an 11-by-7-inch casserole dish.
14.) Pour the mixture into the pan. Place the grated cheese on top, completely covering the seafood mixture.
15.) If freezing: Wrap the uncooked casserole securely with plastic wrap, the with aluminum foil. Place the pan into a plastic freezer bag and seal. Freeze.
16.) When ready to bake: Completely thaw in refrigerator. When ready to bake, remove the foil and plastic wrap. Bake at 350 °F for about 25 to 30 minutes, until bubbly.

They are great as a cool summertime appetizer,...very light and fresh
Make for a snack, appetizer, or light meal.
You wrap thinly sliced vegetables, cooked shrimp, and fresh herbs in a neat rice paper package.
Serve with peanut sauce Or sweet chili sauce for dipping!

????Ingredients:
????cooked shrimp ???? About 3 for each roll
????fresh cilantro
????red bell peppers, seeded and sliced into ¼-inch strips
????cucumbers, sliced into matchsticks
????purple cabbage
????Avocado ????
????For the Peanut Dipping sauce
* 1/2 cup creamy unsalted peanut butter
* 2 tablespoons low-sodium soy sauce
* 2 tablespoons rice vinegar
* 2 tablespoons honey (sugar or maple syrup works too)
* Juice from 1/2 lime (about 1 to 1 ½ tablespoons)
* 5 tablespoons water
* 1/4 teaspoon salt
????Make the peanut dipping sauce:
Mix together the peanut butter, tamari, rice vinegar, honey, lime juice, water, and salt. Taste, and adjust the seasonings to your taste.
Mix together Transfer to a small bowl and place on the platter with the spring rolls.
????Serve the spring rolls:
These rolls are best if served the day they are made. If not serving immediately, cover the platter with a slightly damp cloth and refrigerate until ready to serve.
I think the peanut dipping sauce you serve alongside carries enough flavor!

????Soften the rice paper wrapper

????Dip one of the rice paper wrappers into the water and
????swirl it around until the entire surface is evenly moistened (15 seconds
????Arrange some if your veggies in a line about 1 inch away from the bottom edge of the wrapper.
????Wrap the spring rolls:
????Fold the bottom part of the rice paper wrapper over the vegetables.
????Continue rolling the everything toward the shrimp.
????Once you reach the shrimp, stop and fold the left and right sides of the wrapper toward the center.
????Continue rolling until you reach the top and form a roll.
????Place the finished spring roll on the platter. Repeat for the remaining spring rolls.

Cut the shrimp in half lengthwise so they’re easier to lay flat in the roll.

* 1/2 كوب زبدة فول سوداني كريمية غير مملحة
* 2 ملعقة كبيرة صلصة صويا قليلة الصوديوم
* 2 ملعقة كبيرة خل أرز
* 2 ملعقة كبيرة عسل (السكر )
* عصير نصف ليمونة (حوالي 1 إلى 1 ½ ملعقة كبيرة)
* 5 ملاعق كبيرة ماء
* 1/4 ملعقة صغيرة ملح
????اصنع صلصة الفول السوداني:
????اخلط زبدة الفول السوداني مع خل الأرز والعسل وعصير الليمون والماء والملح. تذوق ، واضبط التوابل حسب ذوقك.
????اخلط العناصر سويًا تم توضع في طبق صغير كمرافق لطبق السبرينغ رولز.

???? قم بتدويرها حتى يتم ترطيب السطح بالكامل بالتساوي (15 ثانية

????اطوِ الجزء السفلي من غلاف ورق الأرز فوق الخضار.
????بمجرد أن تصل إلى الجمبري ، توقف وقم بطي الجانبين الأيسر والأيمن من الورق باتجاه المنتصف.
????قدم السبرينغ رولز:
من الأفضل تقديم هذه الوجبة في يوم صنعها. إذا لم يتم التقديم على الفور ، قم بتغطية الطبق بقطعة قماش مبللة قليلاً ثم ضعها في الثلاجة حتى يصبح جاهزًا للتقديم.

Shrimp salad: a delicious and light recipe
Ingredients:
250g cherry tomatoes
100g grated carrot
150g yellow pepper
100g purple onion
300g broccoli
olive oil
salt
black pepper
red pepper
oregano
300g shrimp
lemon
20g honey
salad
basil
rucola
Directions:
Pour out 250g cherry, 100g grated carrot, 150g yellow pepper, 100g purple onion and 300g broccoli into baking tray. Spread olive oil, salt, black pepper, red pepper, oregano and bake 200°C for 10 minutes. Clear the center of the baking tray and add 300g shrimp. Pour olive oil, salt, black pepper, red pepper, oregano and lemon juice. Bake 200°C for 7 minutes.
Create special sauce: Mix lemon juice, olive oil, 20g honey, red pepper, salt and oregano.
Add salad, basil and rucola into bowl. Pour out cherry, grated carrot, pepper, onion and special sauce. Mix it

2 tbsp salt
1 onion
1 lemon
1 boil in a bag
1 tbsp shrimp boil concentrate
4 corns
2 lbs baby potatoes
5 lbs shrimp
Crab legs (optional)
Infused butter
2 lbs (8 sticks) unsalted butter
2 lbs sausage
Minced garlic(3 heads)
5 tbsp paprika
6 tbsp lemon pepper
Cayenne pepper I used 1/4 cup
1/4 cup old bay seasoning
1/4 cup Cajun seasoning
2 tbsp onion powder
2 tbsp brown sugar
Juice of 1 lemon
1 1/2 cup broth
