Lemon Sugar Cookies || melting moments || jam cookies
Hey baker ;)
These cookies are sooo delicious and they only lasted two days in my house haha.
Here are the ingredients:
room temperature butter - 100 / 7 tablespoons
icing sugar - 115g / ½ cup
room temperature egg - 1
lemon zest - 1 lemon
cake flour - 160g / 1+¼ cup
apricot jam - 2 tablespoons
This recipe makes approximately 25 cookies
* Place in the freezer for 10 mins before baking to retain the shape of the cookie
* BAKE in preheated oven at 150-160⁰C for 10-12 mins or until the edge starts turning brown lightly

How to Make Lemon Cookies
Soft and chewy with pretty, crinkly tops, these lemon cookies are sweet with just a touch of tartness and just the right touch of lemon flavor.
RECIPE:
Ingredients
1 cup unsalted butter softened to room temperature (226g)
1 1/2 cups granulated sugar 300g
2 ½ Tablespoons lemon zest¹
1 large egg + 1 egg yolk room temperature preferred
1 teaspoon lemon extract
1/4 teaspoon vanilla extract
3 cups all-purpose plain flour 375g
2 teaspoons cornstarch
1 1/2 teaspoons cream of tartar
3/4 teaspoon baking soda
1/2 teaspoon salt
Powdered sugar for rolling cookies about ½ cup or 70g
Instructions

00:15 Preheat oven to 350F (175C) and line a cookie sheet with parchment paper.
00:19 In a large bowl using an electric mixer (or use a stand mixer!), combine butter, sugar, and lemon zest. Beat until creamy and well-combined.
02:48 Stir in egg and egg yolk, lemon extract, and vanilla extract until completely combined.
03:25 In a separate bowl, whisk together flour, cornstarch, cream of tartar, baking soda, and salt.
04:03 Gradually (with mixer on low-speed), add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl to ensure all ingredients are completely incorporated.
04:56 Scoop cookie dough by level 1 ½ Tablespoon-sized scoop and roll between your palms until you have a smooth ball. Roll ball through powdered sugar and place on baking sheet. Repeat with remaining dough, spacing cookies at least 2” apart.
05:31 Bake on 350F for 9-11 minutes and allow to cool completely on baking sheet. Enjoy!
Notes
¹I typically need two full lemons for this. When zesting your lemons, make sure to not zest too deeply, avoid the white papery “pith” which is bitter and will make your cookies bitter.

Lemon Icing
1 ¾ cups powdered sugar (220g)
2 Tablespoons fresh-squeezed lemon juice

Lemon Icing

Mixture should be slightly thick and, when the whisk is lifted, should ribbon back into the bowl and hold its shape for several seconds before dissolving back into the bowl. If your icing is too thick, add more lemon juice. If it’s too thin, add more sugar.
07:57 Spoon a small amount of glaze onto the completely cooled cookie, and use the back of the spoon to spread evenly over the top. If desired, garnish with lemon zest.

2 oz cream cheese softened
1 1/2 cups sugar divided into 1 1/4 cups and 1/4 cup
1 1/2 tsp vanilla
2 tbsp fresh lemon juice
zest from 1 lemon
1 egg
INSTRUCTIONS
Whisk together flour, baking soda, baking powder, and salt in a medium bowl
In a large bowl, beat butter, cream cheese, and 1 1/4 cups sugar until smooth and creamy, 1-2 minutes
Mix in vanilla, lemon juice, and lemon zest
Beat in egg
Slowly add flour mixture, mixing in a little at a time, until just combined
Wrap with Reynolds plastic wrap and refrigerate for 1 hour
Preheat the oven to 350 degrees and line a baking sheet with parchment paper
Scoop sugar cookie dough into balls and roll in sugar until coated all over
Bake cookies 10 minutes, until edges just start to brown
Let cookies cool on the baking sheet for 5 minutes and move to a wire rack to finish cooling.
