Iced Lemon Cookies - Soft And Chewy!
These soft iced lemon cookies have lemon juice and lemon zest stirred in to the cookie dough, making these a hit with everyone. Drizzle a fresh lemon glaze over them for an extra punch of citrus and sweetness. These soft lemon cookies are ready in less than 30 minutes!
Full recipe and step by step instructions:
For The Cookies:
3 cups (360 g) all-purpose flour, spooned and leveled
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup (2 sticks, 226 g) unsalted butter, softened
1 ¼ cups (250 g) granulated white sugar
1 teaspoon vanilla extract
2 tablespoons lemon juice
1 tablespoon lemon zest
1 large egg room temperature
For The Icing:
2 cups (228 g) confectioners sugar
¼ cup (60 ml) lemon juice
2 tablespoons milk
2 teaspoons lemon zest
½ teaspoon vanilla extract
Instructions
1. Preheat the oven to 375°F. Line two cookies with parchment paper or silicone baking mat.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl using an electric mixer, cream together butter and sugar until light and fluffy, about 2 to 3 minutes.
4. Add egg and beat to combine. Add vanilla, lemon juice, and lemon zest. Beat to combine. Scrape down bowl as needed.
5. Add flour mixture, and mix at low to medium speed just until no flour streaks remain.
6. Using a cookie scoop, or tablespoon to portion into 1 ½ inch balls. Place on prepared baking sheets, leaving about 2 inches between them.
7. Bake for 10 to 12 minutes. The edges will look done, but the center will still look slightly soft. Remove from the oven and cool on the pan for 5 minutes before transferring to a rack to finish cooling completely.
Make icing. In a small mixing bowl, combine icing ingredients. With an offset spatula, ice the top of each cookie.
Notes:
Make ahead/Storage: You can make the dough up to 2 days ahead of time, and keep covered in the fridge. Let sit at room temperature for several minutes before scooping. Keep stored at room temperature, covered for up to 5 days.
Freezing: You can freeze the cookies for up to 3 months in an airtight container. Thaw at room temperature before enjoying.

Lemon Butter Cookies Recipe Ingredients
1 cup of butter
1 cup sugar
2 egg yolks
1 tsp vanilla
1 tsp lemon zest
2 ¼ cups flour
¼ tsp salt
Lemon Cookie Recipe Directions
In a large bowl, measure out 2 ¼ cups flour, ¼ teaspoon kosher salt. For this recipe, I’ve used a mortar and pestle to give the salt a quick crush so the grains are a little smaller, making them easier to more evenly in the batter. Give the try ingredients a whisk to combine, and set it aside for later.
Next, zest one large lemon. You’ll need about 2 teaspoons for this recipe.
In another large bowl, add the 16 tablespoons of softened butter. Using a hand or stand mixer, beat the butter for a minute or two. Add 1 cup of sugar, and continue beating the mixture for another 2 minutes, stopping to scrape the sides of the bowl. After about 2 minutes, the butter sugar mixture will be light yellow and creamy.
Add in two egg yolks, a teaspoon of vanilla, and a teaspoon of lemon zest. Beat to blend, stopping to scrape down the sides of the bowl. Gradually add in the flour, blending between and scraping down the sides of the bowl.
Place half of the cookie dough on a piece of parchment, and shape it into a log shape, about an inch and a half wide. The dough for these lemon icebox cookies is very buttery and it’ll be soft. Putting it refrigerator will make it firmer and easier to roll. Repeat for the second half of dough and refrigerate for about 20 minutes.
While the dough is chilling, combine a 1/4 cup of sugar with the rest of the lemon zest, and whisk well to combine.
When the dough has chilled for about 20 minutes, remove it from the refrigerator, and now that it's not quite so squishy, form it into a more round log. Sprinkle with the lemon sugar, and use the parchment paper to roll and press the sugar into the sides of the dough. Repeat with the second log of chilled cookie dough and return the dough to the refrigerator for another hour.
Then, preheat the oven to 325 degrees. Once your oven is up to temperature, take the icebox cookie dough out of the refrigerator and slice into 1 inch pieces. Space about 2 inches apart on parchment lined cookie sheets. And I like to sprinkle the tops with leftover lemon sugar.
Bake for 20 - 25 minutes in the 325 oven, cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely.
