How To make The Lemon Refrigerator Cake

eggs, separated
1 1/2
cup
sugar
3/4
cup
lemon juice
1 1/2
teaspoon
lemon rind, grated
1
tablespoon
gelatin powder, plain
1/4
cup
cold water
1
each
angel food cake
1
cup
heavy cream, whipped
Directions:
Use a 10 inch angel food cake or a sponge cake. Combine the lightly beaten egg yolks, 3/4 cup sugar, lemon juice and rind. Cook in the top of a double boiler over hot, not boiling, water until mixture coats a spoon. Remove from heat and stir in the plain gelatin (one envelope) that has been soaked in the 1/4 cup water. Beat egg whites until stiff and gradually add the remaining sugar, beating constantly. Fold in the custard gently.
Tear cake into small pieces and arrange in the bottom of a greased tube pan. Pour custard over cake and alternate layers of cake and the custard until all is used, ending with a cake layer.
Chill until firm. Unmold and serve with whipped cream. You can decorate this dessert with candied cherries or other fruits and nuts if desired.

You just need a few simple ingredients that you can certainly buy in your nearest sari-sari store. This ref cake is one you must have for dessert or even on your special occasion.
Here are the ingredients:
10 pieces lemon square cheesecake, refrigerated
2 packs 250ml all purpose cream, chilled
3/4 cup condensed milk, chilled
1 cup grated cheese
Procedure:
1. Remove lemonsqaure cheesecake from the plastic.
2. Remove the cupcake liners
3. Slice the top part of cheesecake, crumble and set aside.
4. Slice cheesecake into two. Set aside
5. In a mixing bowl, beat the chilled all purpose cream on a medium speed for approximately 2 minutes.
7. Pour in chilled condensed milk and grated cheese.
8. Beat on high speed for 6 minutes or until it doubles the volume.
9. In a baking pan/dish, arrange sliced cheese cakes. Put in cream and spread evenly. Repeat the process.
10. Put in cheese cake crumbs on top and put in generous amount of grated cheese.
11. Cover with cling wrap and freeze overnight.
12. Slice and transfer to a serving dish. Enjoy!

NO BAKE LEMON BLUEBERRY ICEBOX CAKE
Ingredients
* 1 liter heavy or whipping cream (30% fat or above, ideal for whipping)
* 1 1/2 cups sweetened condensed milk
* zest of 3 lemons (plus extra lemon zest for garnish)
* 3-4 cups fresh blueberries (washed and dried)
* 48 butter cookies or tea biscuit cookies (one large package)
Instructions
* Whip the cream on high speed using your electric mixer until soft peaks form.
* While continuing to mix, pour in the sweetened condensed milk in a steady stream until fully incorporated and the mixture reaches hard peaks.
* Add the lemon zest and fold it into the cream mixture gently until fully incorporated.
* Layer the bottom of a 9-inch by 13-inch dish (I like using glass baking dishes for icebox cakes) with butter cookies.
* Top the layer of butter cookies with one-third of the cream mixture and one cup of blueberries.
* Add another layer of butter cookies, then cream, then blueberries.
* Add one more layer of each and then top with some more lemon zest.
* Chill in the fridge for 6 hours or overnight before slicing and serving (for best results, chill overnight).
