How to Make Oatmeal Icebox Cookies
Today we did some baking! We made some cookies that my Grandma had wanted to make. They turned out great!
Full Oatmeal Icebox Cookie Recipe:
Ingredients: (we made a double batch)
1 cup brown sugar
1 cup white sugar
1 cup flour
2 cups nuts
3 cups regular oatmeal
2 sticks butter
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 eggs
Directions:
Cream: sugar and softened butter
Stir and add flour, soda, and salt
Add vanilla, oatmeal, and nuts (chopped)
Roll into several rolls on floured surface. Wrap each in wax paper and store in freezer until needed. As needed, slice thin and place (well spaced) on a greased cookie sheet.
Bake at 300 degrees for 10 - 15 minutes.

EASY Chewy Chocolate Chip and Walnut Cookies Recipe | Frolic & Courage
This is the BEST, easy, chewy chocolate chip and walnut cookies recipe I’ve ever made! I’m by no means a professional baker, but if you’re searching for how to make chocolate chip cookies with walnuts that are soft, gooey, and downright delicious, here it is!
Recipe adapted from the “Best Chocolate Chip Cookies” from Allrecipes.com.
Yield: Makes 24 perfect, tasty chocolate chip and walnut cookies!
INGREDIENTS:
1 cup butter, softened
1 1/2 cups semisweet chocolate chips
1 cup chopped walnuts
1 1/2 cup packed brown sugar (dark brown)
1/2 cup white sugar
2 eggs (room temperature)
2 tsp vanilla extract
1tsp baking soda
2 tsp hot water
1/2 tsp salt
3 cups all purpose flour
INSTRUCTIONS:
Preheat oven to 350F
In a large mixing bowl, cream the butter. Once creamed, add the brown sugar, white sugar, and blend until smooth.
Beat in one egg, then beat in the second egg. It is important to beat in the eggs one at a time.
Add the vanilla extract to mixture and blend. Set batter aside.
In a separate bowl, add the baking soda then stir in hot water until fully dissolved.
Pour fully dissolved baking soda mixture into the batter, then and salt and stir.
Stir in flour, semi-sweet chocolate chips, and walnuts. Mix until ingredients are blended together. Do NOT overblend!
Drop large table-spoonfuls of dough onto ungreased pan, about 2 inches apart. The larger the cookie dough, the more space it needs apart.
* For thinner cookies, spoon smaller amounts onto cookie sheet and flatten.
Bake for 10-12 minutes, or until edges are brown. The time may vary based on your oven and altitude, so watch carefully!
* Special Note: Remember to remove the cookies when the edges are brown, NOT when the center of the cookie is brown. The cookies may look “undone” in the center but trust me - they will harden and continue to cook for a few minutes outside the oven. This will make the difference between having a soft, chewy chocolate chip and walnut cookie versus a crispy cookie.
Remove cookies from oven and let cool on baking sheet.
Once cooled, store in an air-tight container, or in a container with one slice of sandwich bread to keep the cookies soft and moist.

Chocolate walnut shortbread cookies | 12 days of EASY Christmas cookies (Day 12)
For the final easy cookie recipe in our 12 days of Christmas cookies series we are making slice and bake chocolate walnut shortbread cookies! These easy 5 ingredient make ahead chocolate shortbread cookies have a rich dark chocolate flavour with just a hint on sweetness! Also known as icebox cookies, these cookies have a wonderful light, buttery texture and literally melt in your mouth! Make the chocolate walnut shortbread cookies up to 2 months in advance, and store it in your freezer to bake closer to Christmas! Remove the frozen dough an hour before you slice and bake these for Christmas!
Chocolate walnut shortbread cookie recipe
Ingredients:
3/4 cup all purpose flour 100g
1/4 cup cocoa powder 30g
1/2 cup softened butter 113g
1/3 cup powdered sugar 35g
1/2 cup chopped walnuts 70g
Directions:
In a small bowl combine all-purpose flour and cocoa powder. Whisk until well combined. In a separate large bowl cream butter and powdered sugar. Mix this on low for two to three minutes or until the mixture is nice and creamy and all of the sugar is incorporated into the butter. Add in the dry ingredients and mix until everything is well combined and your dough comes together. Add in chopped walnut pieces and mix until combined. Place a piece of plastic wrap on a surface and transfer the cookie dough. Lightly wrap it in the plastic wrap and form it into a cylinder that's roughly two and a half inches in diameter. Chill your dough for two hours or alternately this can be frozen for up to two months, just remove it from the freezer about an hour before you want to bake. Once dough has chilled preheat your oven to 350F/175C. Use a sharp knife to cut it into quarter inch rounds. Place the chocolate shortbread cookies onto parchment lined sheets and bake for 8 to 10 minutes. Allow them to cool on the pan for a moment and then move them to a wire rack to finish cooling completely.

【Directions】
1. Mix butter and powdered sugar well in a large bowl.
2. Add egg yolk and mix.
3. Sift in cake flour, Almond flour, mix.
4. Divide cookie dough into 4 even portions
5. Take the 1st cookie dough. Add Dark Chocolate chip and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
6. Take the 2nd cookie dough. Add dry cranberries and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
7. Take the 3rd cookie dough. Add Cocoa powder and white chocolate chips, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
8. Take the 4th cookie dough. Add purple sweet potato powder and raisin, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
9. Shape dough into a cylinder with 4cm(1.6inch) diameter.
10. Wrap in plastic wrap and freeze for at least 1 hours.
11. Slice the dough into 7mm (0.3 inch) thick.
12. Place them on a baking sheet lined with parchment paper.
13. Pre-heat oven to 338 °F/170℃. Bake for 15 minutes.
14. Cool the cookies on the baking sheet or a wire rack.
