Shahjahani Korma - Mughlai Korma Recipe -Indian Goat Meat Recipe
#ShahjahaniKorma is a rich, indulgent dish named after the Mughal Emperor Shahjahan, the builder of the Taj Mahal, one of the Seven Wonders of the modern world. This Mutton/Goat Korma has hints of it's Central Asian origins namely in the use of dried Apricots, Almonds and Saffron. These ingredients give it a unique blend of spicy, fruity and nutty flavours. This dish was originally almost always cooked with lamb or large goat. This is a wonderfully rich and flavourful dish to cook for a special occasion.

Badami Gosht Korma Recipe | How to Make Lamb Almond Korma | Mutton Recipe | Smita Deo

Ingredients:-
4 tbsp. Ghee
1 kg. Mutton
3 tbsp. Ginger-Garlic Paste
1 cup Fried Onions
½ tsp. Rose Water
Whole Spices:-
1-inch Cinnamon
4 Green Cardamoms
2 Black Cardamoms
Dry Spices:-
1 tbsp. Coriander Seed Powder
½ tbsp. Cumin Seed Powder
¼ tbsp. Turmeric Powder
2 tbsp. Red Chilli Powder
For Almond and Yoghurt Paste:-
1 cup Almonds, soaked in warm water and skinned
2 cups Yoghurt
Method:-
1. In a wok melt ghee and add the mutton and whole spices to it.
2. Fry the mutton until golden in colour.
3. In a mixer/grinder, grind together ½ cup almonds and 3 tbsp. Yoghurt to a smooth paste.
4. Add ginger-garlic paste, dry spices and mix well. Fry again for 2 minutes.
5. Now add the almond and yoghurt paste and turn the flame to low.
6. Add the rest of the yoghurt and saute until the oil separates on a high flame.
7. Then add fried onions, rest of the almonds and stir until the oil separates.
8. Add 3-4 cups water, salt and mix well.
9. Cover with a lid and cook on a medium flame for 20 minutes or until the mutton is cooked.
10. Add rose water and cook for 2 minutes covered with a lid.
Lamb Badami Korma is ready!

LUCKNOWI MUTTON KORMA
Preparation time 5-10 minutes
Cooking time 30-35 minutes
Serve 2-4
Ingredients
For Curd Mixture
1 ½ cup Curd, beaten, दही
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tbsp Coriander powder, धनिया पाउडर
¼ tsp Cumin powder, जीरा पाउडर
For Masala
5-6 Black cardamom, बड़ी इलायची
½ tbsp Black peppercorns, काली मिर्च के दाने
1 tbsp Coriander seeds, धनिया के बीज
5-6 Cloves, लौंग
4-5 Green cardamom, हरी इलायची
2 Bay leaf, तेज़पत्ता
1 inch Cinnamon stick, दालचीनी
½ tsp Shahi jeera (optional), शाही जीरा
1 Mace, जावित्री
Salt to taste, नमक स्वादअनुसार
For Lucknowi Mutton Korma
2-3 tbsp Ghee, घी
2-3 tbsp Oil, तेल
1 inch Cinnamon stick, दालचीनी
2 Bay leaf, तेज़पत्ता
2 Black cardamom, बड़ी इलायची
750 gms Mutton (with bones) मटन
4 medium Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
Curd Mixture, दही का मिश्रण
4-5 cups Water, पानी
½ cup Saffron water, केसर का पानी
2 tsp Kewra water, केवड़ा पानी
2 tsp Cashew paste, काजू पेस्ट
1 ½ tbsp Coriander leaves, chopped, धनिया पत्ता
2 tsp Prepared Masala, तयार किया हुआ मसाला
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Curd Mixture
In a bowl, add curd, ginger garlic paste, degi red chili powder, turmeric powder, coriander powder, cumin powder and mix everything well.
Keep it aside for further use.
For Masala
In a shallow pan, add black cardamom, black peppercorns, cloves, green cardamom, bay leaf, cinnamon stick, shahi jeera, mace and salt to taste.
Dry roast it on moderate heat for 4-5 minutes.
Transfer it into a grinder jar and make it fine powder.
Keep it aside for further use.
For Lucknowi Mutton Korma
In a lagan or handi, add ghee, oil, once it's hot, add cinnamon stick, bay leaf, black cardamom and let it splutter.
Add mutton and keep sauteing for 2-4 minutes on medium flame.
Add onions, salt to taste and saute until the onions turn light brown in color.
Add curd mixture and keep sauteing for 5-10 minutes or until the masalas are cooked.
Add water, close the lid and cook until mutton is tender.
Add saffron water, kewra water, cashew paste and mix well.
To finish add prepared masala, coriander leaves and give a good stir.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.

ALMOND (BADAMI) MUTTON KORMA RECIPE
Ingredients for Almond Paste
Almonds - 20-25 Pcs (soaked in water overnight and skin removed)
Poppi Seeds (khashkhash) - 1 Table Spoons (thoroughly washed and drained)
Desiccated Coconut - 2 Table Spoons
Fresh Full Cream Milk - ½ Cup
Pour all items in a blender and blend them till they form a paste. Set aside for later use.
Main Curry Ingredients
Mutton - 1 Kg
Onion - 2 medium (chopped)
Black pepper - 12-14 pcs whole
Cinnamon Sticks - 2-3 small pcs
Cumin seeds - ½ Tea Spoon
Cloves - 3-4 pcs
Green Cardamom - 4 pcs
Black Cardamom - 2 pcs
Jaifal (Nutmeg) - 1 small pc
Garlic Powder - 1 Table Spoon
Ginger Paste - 1 Table Spoon
Red Chili Powder - 1 Tea Spoon
Salt - 1 Tea Spoon
Coriander Crushed - 1 Tea Spoon
Turmeric - ½ Tea Spoon
Fresh Yoghurt - 1 ½ Cup
Cooking Oil - ½ Cup
Water - 2 glass
Heat oil in a suitable pan on medium heat. Add chopped onion and fry until golden brown. In between add Black pepper, Cinnamon Sticks, umin seeds, green & black cardamom and nutmeg. Now add mutton and cook for 5-6 minutes while progressively adding all Red Chilli Powder, Turmeric, Salt, Crushed Coriander while continuously mixing and cooking. Now add garlic powder, Ginger paste and keep cooking. Now add already prepared almond paste and keep mixing and cooking on medium flame for 2-3 minutes. Now add yoghurt and again keep mixing and cooking for about 5 minutes.
Now add 2 glass of water and cover with lid. Turn the flame to low and let it cook for 30-35 minutes till the time mutton becomes tender and well cooked.
Full of energy, very aromatic Badami Mutton Korma is ready to serve. Can be served with Naan, Paratha or Chapati at Sahoor or Dinner after Iftaar.

Whisked Yogurt - 1/2 cup
Salt - 1 tsp
Fresh Cream - 1/2 cup
Chopped Green Chilies - 2 to 3
Chopped Coriander Leaves
Cooking Oil - 2 tbsp
Green Cardamom - 4
Cloves - 4
Cumin Seeds - 1/2 tsp
