Lamb Casserole with Tomatoes and Zucchini
*Ingredients*
garlic, lamb breast, meat, olive oil, onion, pepper, salt, thyme, tomato, vegetable oil, zucchini
*Recipe*
Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
Add the onion, garlic and thyme and cook them until slightly brown. After the mixture is ready, add it on the bottom of an oven tray.
Heat the remaining vegetable oil in a skillet over medium heat. Add the diced lamb, and season it with salt and pepper. Cook it until golden on both sides, around 4-6 minutes.
Place turns of tomato and zucchini slices over the lamb.
Slide the tray into the oven for the next 35 minutes!

Recipe - Farmers lamb casserole
INGREDIENTS:
-2 tablespoons plain flour
●900g lamb forequarter, chump or neck chops, halved
●1 tablespoon olive oil
●8 pickling onions , peeled (see tip)
●2 carrots , peeled, diced
●1 cup (250ml) chicken stock
●400g can diced tomatoes
●400g can butter beans , rinsed, drained
●1 cup (120g) frozen peas
Braised Lamb Stew / Casserole Recipe
Lamb Stew
Ingredients:
600g Lamb Cubes
1 or 2 Carrots, chopped
2 Medium onions, sliced
5 Cloves of Garlic, minced
2 or 3 Celery Stalks, chopped
0.5 Orange, juiced
2 Cups of Chicken Stock
1 Cup of Red Wine
2 Bay Leaves
1 tsp of Thyme
1 tbsp of Tomato Paste
1 tsp Dry Rosemary or 2 Rosemary Sprigs
Salt and Pepper
Olive Oil
Method:
1. Preheat the oven to 200 C
2. Season the meat with salt and pepper. Mix throughly till evenly distributed.
3. Saute the meat on the high heat in the pan till it turns golden-brown. Remove the lamb from the pan and put aside.
4. Prepare the veggies by chopping onions, carrots, celery. Mince the garlic cloves.
5. Saute the veggies in the pan till caramelised.
6. Season veggies with salt and pepper, turn the heat to medium and add tomato paste and let it cook for around 3 mins.
7. Add 1 cup of the red wine, stir it and let it simmer till it reduced in half
8. add 2 cups of the chicken stock (you can use vegetable or beef stock instead) and bring it to the boil
9. Squeeze half of the orange into the pan, add thyme, rosemary and 2 bay leaves
10. Return meat to the pan and bring everything to the boil
11. If you cook in the dutch oven, cast iron bowl then you can stick the bowl directly into the oven. Otherwise transfer the mixture into oven safe bowl with lid and stick it in the oven.
12. Cook in the oven under the lid at 200 C for 2 hours
13. You can serve the stew with any sides of your choice, but my suggestion is mashed potato.

- lamb shoulder [12 oz / 350 g]
- butter [1 tbsp / 10 g]

- garlic [1 big clove]
- dried oregano [half teaspoon]
- rice [1 oz / 30 g]
- hot water [200ml for lamb + 60 ml for rice]
- salt and pepper to taste
For the yogurt mixture:
- 2 eggs
- Greek yogurt [1 cup / 250 g]
- butter [1-2 tbsp / 20g]
- all purpose wheat flour [2 tbsp / 20 g]
- salt & pepper to taste
- pinch of ground nutmeg
