How To make Laksa
1/2 lb Rice vermicelli
3 lb Whole fish
7 1/3 c Water
2 ts Galangal powder
3 Stems lemon grass chopped
5 Sprigs fresh mint
5 Sprigs fresh basil
8 Dried kaffir lime leaves
4 Dried red chillies, halved
8 sm Fresh red chillies, halved
8 Dried kaffir lime leaves
-extra 3 2/3 c Coconut cream
3 oz Bean sprouts (chinese white)
2 ts Salt
2 ts Caster sugar
CHILI PASTE:
3 Stems lemon grass, finely
-chopped 1/4 ts Shrimp paste
1/3 c Water
3 ts Galangal powder
3 sm Fresh chillies
Add vermicelli to pan of boiling water, boil uncovered 2 minutes or until just tender, rinse and drain. Remove and discard heads from fish, fillet fish, reserving bones. Remove and discard fish skin. Cut fillets into strips. Combine water, powder, lemon grass, mint, basil, lime leaves, and dried and fresh chillies in pan, simmer covered for 30 minutes. Add fish bones, simmer for another 10 minutes. Strain resulting stock, discarding bones and chilli mixture. You need 1125 ml of stock so add water if necessary. Place extra lime leaves in a bowl, cover with warm water, stand 20 minutes. Drain, and slice leaves thinly. Return stock to pan, add chilli paste, fish strips, coconut cream, sliced lime leaves, sprouts, salt and sugar and bring to the boil. Divide vermicelli into serving bowls, pour soup over it. Garnish with extra sliced chillies, baby basil leaves and bean sprouts. Chilli paste. Blend or process all ingredients until smooth.

The ULTIMATE Singapore Laksa recipe with the perfect Sambal!
OPEN for ingredients! Today we're making Laksa, a spicy, rich 'lemak' coconut curry noodle dish that is a favourite in Singapore. Long list of ingredients, but the steps are super easy and totally worth it. I know some of us want more spice, so I also have a recipe for a special sambal chilli full of umami, perfect with laksa so let's go!

Ingredients:
**Laksa Spice Base Paste:**
- 100ml of Dried Chilli Paste or 10 Dried Chillies, soaked in boiling water
- 5 Red Chillies
- 1 medium Onion or 2-3 shallots
- 2-3 Garlic Cloves
- 4 Candlenuts
- 20g or 1 tbsp Ginger
- 20g or 1 tbsp Galangal
- 20g or 1 tbsp Fresh Turmeric or 1 tsp Turmeric Powder
- 2 Lemongrass Stalks, inner white core
- 20g or 1 tbsp Belachan or Fermented Dried Shrimp Paste
- 30g or 1 tbsp Dried Shrimps
- 1 tbsp Coriander Seeds
**Easy Prawn Broth:**
- 300g Prawn heads and shells
- 1 litre Water
- Alternatively, just use stock cubes, seafood or ikan bilis would be best, but chicken works too.
**Laksa Gravy:**
- 1 litre Prawn Broth
- 300ml Coconut Milk
- 2 tbsps Fish Sauce, or to taste
- 1 tbsp Brown Sugar, or to taste
- Fried Tofu Puffs or Taopok
- Laksa Leaves/Vietnamese Coriander Leaves/Daun Kesum (optional)
**Noodles bits and bobs:**
- Thick Vermicelli / Laksa Rice Noodles / Bee Tai Mak
- 12 Prawns
- Fishcakes, sliced
- Cockles (i did not use this)
- Beansprouts
- Veggies
- Boiled Eggs
**Easy Spicy Sambal:**
- 100ml of Dried Chilli Paste
- 2-3 Shallots
- 2-3 Garlic
- 2 tbsps Belachan
- 2 tbsps Dried Shrimps
- 1/2 tsp Salt
- 1 tbsp Sugar
- 1 tsp Tamarind Paste

Traditional Sarawak laksa is a famous Sarawak noodle dish which looks like the regular curry laksa. However, the Sarawak’s version of this dish is slightly subtler compared to the normal curry laksa. It is made using a laksa paste consisting of sambal belacan, tamarind, lemongrass, herbs and spices with a little coconut milk. Hence, it has a fine balance of aromatic herbs and spices with a subtle hint of sourish and chili note and not overly rich and creamy.
A typical bowl of Traditional Sarawak Laksa usually consists of rice vermicelli, omelette strips, shredded chicken, beansprouts, prawns, fresh coriander and lime. I have included yellow noodles in this recipe just for variety though. Enjoy!

传统砂拉越叻沙是一种著名的砂拉越佳肴。看起来就像普通咖喱叻沙,但砂拉越叻沙是一种味道比较温和的叻沙。这食谱用的是砂拉越的叻沙酱,里头有的是叁巴马来栈,罗望子,柠檬草,各种香料,再加上少许椰浆。最后制成的是一种美妙的平衡:芬芳的香料再加上少许酸味,再一些辣味,不会过于丰富细腻的口感。

For the Curry Paste
5-6 Dried Kashmiri Red Chillies
Coriander Stalks (chopped)
4-6 Bird's Eye Chillies
2 tsp Sugar
Lemongrass Stalks (chopped)
4-6 Thai Basil Leaves
1-inch Galangal (chopped)
1/4 cup Shallots
8-10 Garlic Cloves
3-4 Kaffir Lime Leaves
1 tsp Turmeric Powder
1 tbsp Coriander Seeds Powder
1 tsp Dark Soy Sauce
Making the Curry/Soup
2 tbsp Oil
2 cups Water
200 gms Chicken Breast (cut into strips)
Noodles
Salt (as required)
1 cup Coconut Cream
For Garnish
Boiled Egg Slice
Coriander Sprig
