1/2 Medium-sized (4 oz/100
Grammes) aubergine, cut Into Three-quarter inch by half Inch (2 cm x 1 cm sticks) 2 sm Carrots (4 oz/100 grammes),
Peeled and cut into Three-quarter inch by half Inch (2 cm x 1 cm sticks) 4 oz (100 grammes) peas
4 oz (100 grammes) French beans,
Cut into 1 inch (2 and a Half Cm) pieces 1 Medium-sized potato (4 oz x
100 Grammes), peeled and cut
Into Three-quarter inch by half Inch (2 cm x 1 cm sticks) 2 oz (50 grammes) fresh grated
Coconut 4 Fresh hot green chillies
2 tb White poppy seeds
Quarter tsp salt 3 Medium-sized tomatoes,
Roughly chopped 1 tb Natural (plain) yoghurt
1 ts Garam masala
2 tb Chopped, fresh green
Coriander Place the aubergine, carrots, peas, French beans and potato in a medium-sized saucepan. Add 8fl oz (250ml) water. Bring to the boil. Cover, turn the heat to medium and cook for four minutes or until the vegetables are just tender. Meanwhile put the coconut, chillies, poppy seeds and salt in an electric blender. Add 5 fluid ounces (150 ml) water and grind to a fine paste. Set aside. When the vegetables are cooked, add the spice paste and 5 fluid ounces (150 ml) water. Stir and simmer gently for five minutes. Add the tomatoes, yoghurt and garam masala. Stir gently to mix well. Bring to the boil and simmer gently for 2 - 3 minutes. Turn into a serving dish and garnish with the fresh coriander. TIPS If you wish to substitute unsweetened, desiccated coconut for fresh coconut use 5 tbsps (1 oz/30 grammes). Barely cover with warm water and leave for one hour, then proceed with the recipe. Coriander is the parsley of India. Mix it with vegetables and chicken, use as a garnish and add the stems to soup and dals for extra flavour. To keep coriander fresh, stand sprigs in a glass of water, cover with a plastic bag and keep in the fridge. Kurma Westerners who come to Madras, Tamil Nadu's capital city, expecting to find meals made with "Madras" curry powder are in for a surprise. Curry powders manufactured in this southern Indian city are strictly for export. Aromatic spices, fennel seeds and fresh coconut are the ingredients that give the superb cuisine of Tamil Nadu its flavour and texture. For this dish, vegetables are "dressed" with a ground paste of fresh coconut, poppy seeds and green chillies, which is cooked briefly with the vegetables so that it is absorbed by them. Vegetable korma is a very easy and simple recipe. We already seen aloo korma recipe. Today we are making hotel style vegetable korma that tastes just awesome. You can make this recipe with the ingredients easily available in your pantry. This is Karnatak style korma I am preparing. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Cauliflower florets
• Finely chopped Beans
• Sliced Carrot
• Fresh peas
• Chopped Potatoes
• 1/2 cup shredded fresh Coconut
• 1~2 dried Red chilies
• 4 Black peppercorns
• 2~3 Cloves
• A small piece of Cinnamon
• Oil
• 2 Cinnamon sticks
• 2 Cloves
• 2 Black peppercorns
• Finely chopped Onion
• 1 tsp Coriander powder
• 1 tsp Garam masala
• Red chili powder
• Few Cashew nuts
• Salt to taste
Method:
• Take cooker and add water at the base.
• Take flower, carrot, beans, carrot, peas, potatoes in a cooker pot.
• You can use veggies of your choice.
• Add water and close the lid.
• Cook on medium heat until just 1 whistle.
• Take fresh coconut, dry red chilies, black peppercorns, cloves, cinnamon, a little water in a
blender jar and blend everything into smooth paste.
• You can use dry coconut in place of fresh coconut.
• The masala is all ready.
• Heat up oil in a pan. Add cinnamon, cloves, black pepper, onion and fry until onion gets light
golden color.
• Add the blended masala, coriander powder, garam masala, red chili powder and mix well.
• Fry everything for about 2-3 minutes.
• Add the cooked veggies, cashew nuts, salt and mix everything well together.
• Add water to adjust the consistency and simmer the korma for about 8-10 minutes.
• Veg korma is all ready.
• It thickens up as time passes. So decide what consistency you want.
• This korma goes well with puri or bun.

Ingredients:
- 3 cups of fresh vegetables
fresh green peas
chopped carrots
chopped beans
cauliflower florets
peeled and chopped potatoes
- 1 ½ cup of water
- dal chini
- 4 cloves
- seeds of 2 cardomom pods
- ½ tsp of fennel seeds
- ½ tsp of cumin seeds
- 2tsp of coriander seeds
- ½ tsp of turmeric powder
- 1 tsp of red chilli powder
- green chillies
- 1inch of fresh ginger
- 2 tbsp of fresh coriander leaves
- 1 cup of freshly grated coconut
- 2 tsp of poppy seeds
- 20 cashew nuts
- 3-4 chopped tomatoes
- water
- 4 tbsp of Oil
- ½ tsp of yellow asafetida
- 11/2 tsp of salt
Method:
- In a utensil add fresh green peas, chopped carrots , chopped beans, cauliflower florets, peeled and chopped potatoes and water
- Cover it with the lid and cook until the vegetables are done.
- Grind together dal chini, seeds of cardamom pods, fennel seeds, cloves, cumin seeds, coriander seeds, turmeric powder and red chilli powder.
- Blend it to a course powder.
- Also add green chillies, ginger, coriander leaves,freshly grated coconut, poppy seeds, cashew nuts, chopped tomatoes and water.
- Heat a pan and add oil and yellow asafetida then add the freshly ground masala paste.
- Add the vegetables and some water to it and cook well and add salt
- Vegetable Kurma is ready to be served!
