1 c Sugar 4 Eggs 1/2 ts Vanilla 1/2 c Butter 1 1/2 ts Ground cardamom 1 1/4 c All-purpose flour 2 1/2 ts Cornstarch 3 tb Cold water Using a stationary or hand-held mixer, beat together the sugar, eggs, and vanilla until the mixture is light and airy. Melt the butter and let it cool. Sift the cardamom and flour together. Mix the cornstarch and water until smooth. With the mixer on low speed, alternately add the butter and flour to the sugar-egg mixture. Beat in the cornstarch mixture. Pour a spoonful of batter on a heated krumkaker iron, press it shut, and bake the cookie until golden on each side. Drape around a cone or in a cup until dry. I like to serve these with whipped cream that has cloud berries (multebaer) whipped into it. Realizing that cloud berries are hard to come by, my second choice would be raspberries.

Krumkake - Traditional Norwegian Waffle Cookie
Krumkake or Norwegian Krumkake (means curved cake) is a traditional Norwegian very thin waffle cookie. This is made with a Krumkake iron and a cone shape roller. Its buttery, mild sweetness and crispiness makes it delicious. It also also looks beautiful. You can serve it plain, with coffee or ice cream and tea.
Ingredients:
1 egg 1 cup sugar 1-2 tsp vanilla sugar 3/4 cup butter 3/4 cup wheat flour 3/4 cup potato flour 3/4 cup water Half tsp ground cardamom
Procedure:
1. Whisk eggs and sugar 2. Add melted butter and all purpose flour. 3. Stir potato flour into water 4. Add the potato flour solution to the whisked egg and sugar. 5. The batter should be thin - add more water if needed. (Thinner Krumkaker are crispier.) 6. Stir the batter before pouring in the Krumkake iron 7. When the krumkake iron is hot, pour the batter into the iron 8. Press the krumkake iron and cook until golden brown 9. Remove the krumkake from the iron with a spatula 10. Roll onto a cone shaped stick and let it cool. 11. Serve it plain, with coffee, or ice cream and tea.
Have you ever had krumkake cookies? They're a delicious, rolled wafer cookie from the Scandinavian countries. They're made on a special Krumkake iron and are similar to Italian pizzelles, but are more delicate and are flavored with cardamom. Get all the details on the blog:
