Norwegian Grandma baking Christmas cookies - Krumkake, Fattigmann, Sandkake
I'm out in the countryside in Norway to bake some Christmas cookies. With me I have Karin, a master chef when it comes to Norwegian traditional cuisine. Learn how to bake krumkaker, fattigmann & sandkaker.

Sandkaker
750 g/25,6 oz Wheat flour
1/2 kilo/17,6 oz Butter
250 g/8,8 oz Powdered sugar
1 egg
4-5 Drops of almond essence
Krumkaker
4 Eggs
200 g/7 oz Sugar
200 g/7 oz Melted butter
200 g/7 oz Wheat flour
Krumkake iron:
Fattigmann
6 Egg yolks
6 Tbsps of sugar
6 Tbsps of cream for whipping
1/2 Small spoon of cardamom
200 g/7 oz Wheat flour
2 Tbsps cognac (or try other brown liquor)

Krumkake Cookies by Diane Lovetobake

These cookies can be vanilla or chocolate flavor
(You can make Ice Cream cones as well)
This is a thin crisp cookie rolled in a cone shape or like a cigar
1/2 cup unsalted butter room temperature
1 cup granulated sugar
2 eggs
1 cup milk
1 1/3 cup all-purpose flour
1/2 teaspoon vanilla or choice of extract
1/2 teaspoon butter extract Optional
Making chocolate batter add 2 Tablespoons baking cocoa
Heat your krumkake iron on a stove over medium heat
or use a waffle cone maker or pizzelle iron.
Cream together butter and sugar till pale in color
Add eggs, and combine, pour in milk alternately with flour till smooth, Add vanilla, butter extract together.
Place batter by tablespoon onto preheated iron, maker etc.
Bake till done 2-3 minutes depending what your using to bake these cookies with.
Remove from heat quickly roll cookie around a wooden spoon handle or a cone before they harden.
Makes 30-40 cookies
Filling: Whipped Cream, Sour Cream with tart jelly,sprinkle powder sugar over them, You can dip the ends in melted milk chocolate.too.

Ingredients:
* Flour mixture:
290 gr rice flour
180 gr tapioca starch
1/2 tsp = 3 gr kosher salt
1/2 tsp ground cinnamon
190 gr sugar
2 Tbsp = 20 gr black sesame seeds
2 Tbsp = 20 gr white sesame seeds
* Liquid mixture:
3 eggs
1 stick of unsalted butter
177 gr = 1/2 cup sweetened condensed milk
1 can = 400 ml coconut cream
2 tsp vanilla extract
* Mixing flours and sugar well together before adding the wet ingredients, will help the batter mix easier and smoother without any lumps.

Norwegian Krumkake
Norwegian Krumkake
(pronounced KROOM-Ka-Ka)
Ingredients:
½ cup butter
4 eggs
1 cup sugar
½ tsp. ground cardamom
½ tsp. vanilla
1½ cups flour
2 tbsp. cornstarch
ground coffee (optional)
Directions:
1. Melt butter and cool slightly. Preheat the Krumkake Iron.
2. In a medium bowl, beat eggs with a mixer with medium speed for 1 minute. Add sugar, continue besting for about 3 minutes or until sugar is almost dissolved. Stir in butter, cardamom and vanilla into the egg mixture.
3. In a small bowl, combine flour, cornstarch and optional coffee, of used. Add flour mixture to the egg mixture. Stir until smooth.
4. Drop a spoonful onto the preheated open Krumkake Iron and close lid. Cook approximately 10 seconds, flip the iron and cook the other side. Roll warm Krumkake onto a tapered forming tool. If you like, pipe the cookie cones full of sweetened whipped cream and serve immediately. (Makes about 2 dozen cookies)
LeRoy’s Tip: When placing batter onto the Krumkake Iron, place it slightly off center, towards the hinge.
