OPPSKRIFT KRUMKAKER
INGREDIENSER
ca. 35 stykker
4 stk egg
250 g sukker
250 g TINE Meierismør , smeltet
250 g hvetemel
½ ts malt kardemomme (valgfritt)
SLIK GJØR DU DET
1. Du trenger et krumkakejern og eventuelt en krumkakepinne.
2. Visp egg og sukker til eggedosis. Rør i smør, mel og kardemomme. La røren svelle i ca. 15 minutter.
3. Legg en stor teskje røre på midten av det varme jernet. Stek kakene gyllengule ved svak varme.
Tips!
Hvis du opplever at røren blir tykk etterhvert, så sett til litt vann for å få den tynnere igjen.
4. Form til kremmerhus rundt en krumkakepinne raskt mens kaken fremdeles er rykende varm. Dersom du vil forme kakene til strull (et rett rør) bruker du en pinne og ruller kaken rundt. Du kan også legge kakene over en kopp. Da får du en form som du kan fylle med krem og gjerne friske bær, eller hva du måtte ønske.
5. Oppbevar krumkakene i tett boks.
Tips!
En god huskeregel for krumkaker er at du skal bruke like mye mel, sukker og smør som eggene veier. Det vil si at til 4 egg som veier 250 gram, trenger du 250 gram sukker, 250 gram smør og 250 gram hvetemel.
Making Norwegian Krumkake Cookies
I love eating these cookies as much as I love making them. I have been making krumkake for my family for many years and it is a family favorite. I hope you will enjoy it also. I put heavy whipping cream, and mix a little of lingonberry or cloudberry jam in the whipped cream. I whip it myself to go inside the cookies. Serve it with fruit. You can also dip the open end of the cookies in dark chocolate or white chocolate.
Here is the recipe
krumkakke
1 cup sugar
2 eggs
1/2 cup melted butter
2/3 cup milk
1 1/3 cups all-purpose flour
1 tsp crushed cardamom seeds
Water, if necessary
In a medium bowl, combine sugar, eggs, and butter. Use a whisk to beat in milk until the mixture is blended and smooth. Stir in flour until blended. Stir in cardamom. Preheat the Krumkaker iron (or the electric one) to medium heat. If you drop a bit of water and it sizzles it is ready (or electric one the light will go on). For the iron, you need to lightly brush butter on the iron before you make the cookies. Not necessary on the electric one. Spoon 1 tablespoon batter into the center of the iron. Put it a little towards the back on the electric. Bake for 1 min on each side with the krumkake iron. Or the electric, when the light goes off. Insert the tip of a knife under the cookie to remove from the iron (or electric) and roll it around the wooden cone shape ( or you can shape them over an upside-down glass, while hot.
Cookies become crips when they cool down.
Store in airtight containers and they freeze well. This recipe makes 25 to 30 krumkakes.

Krumkake - Traditional Norwegian Waffle Cookie
Krumkake or Norwegian Krumkake (means curved cake) is a traditional Norwegian very thin waffle cookie. This is made with a Krumkake iron and a cone shape roller. Its buttery, mild sweetness and crispiness makes it delicious. It also also looks beautiful. You can serve it plain, with coffee or ice cream and tea.
Ingredients:
1 egg
1 cup sugar
1-2 tsp vanilla sugar
3/4 cup butter
3/4 cup wheat flour
3/4 cup potato flour
3/4 cup water
Half tsp ground cardamom
Procedure:
1. Whisk eggs and sugar
2. Add melted butter and all purpose flour.
3. Stir potato flour into water
4. Add the potato flour solution to the whisked egg and sugar.
5. The batter should be thin - add more water if needed. (Thinner Krumkaker are crispier.)
6. Stir the batter before pouring in the Krumkake iron
7. When the krumkake iron is hot, pour the batter into the iron
8. Press the krumkake iron and cook until golden brown
9. Remove the krumkake from the iron with a spatula
10. Roll onto a cone shaped stick and let it cool.
11. Serve it plain, with coffee, or ice cream and tea.

Norwegian Krumkake
(pronounced KROOM-Ka-Ka)
Ingredients:
½ cup butter
4 eggs
1 cup sugar
½ tsp. ground cardamom
½ tsp. vanilla
1½ cups flour
2 tbsp. cornstarch
ground coffee (optional)
Directions:
1. Melt butter and cool slightly. Preheat the Krumkake Iron.
2. In a medium bowl, beat eggs with a mixer with medium speed for 1 minute. Add sugar, continue besting for about 3 minutes or until sugar is almost dissolved. Stir in butter, cardamom and vanilla into the egg mixture.
3. In a small bowl, combine flour, cornstarch and optional coffee, of used. Add flour mixture to the egg mixture. Stir until smooth.
4. Drop a spoonful onto the preheated open Krumkake Iron and close lid. Cook approximately 10 seconds, flip the iron and cook the other side. Roll warm Krumkake onto a tapered forming tool. If you like, pipe the cookie cones full of sweetened whipped cream and serve immediately. (Makes about 2 dozen cookies)
LeRoy’s Tip: When placing batter onto the Krumkake Iron, place it slightly off center, towards the hinge.
