Ingredients for making Meringues:
4 Eggs
1/8 Teaspoon of lemon juice
8.8 oz of caster sugar
Vanilla extract
Salt
parchment paper
Instructions for making Meringues:
- First, separate the whites from the yolks with your eggs and pour the egg whites into a large mixing bowl.
- Add your lemon juice to the bowl, and whip the mixture with a stand mixer and mix until the cream holds it's peaks.
- Then while mixing, add your caster sugar gradually, one tablespoon at a time.
- Once all the sugar is added, turn up the speed on the mixer. Once mixed, check to make sure all the grains are gone.
- Now add your a dash of vanilla extract and a pinch of salt and whip the ingredients until the cream forms stiff peaks.
- Now on a baking pan, use a little bit of cream to glue down your parchment paper, and line the bottom of the pan with it.
- Now form and place small balls of your Meringue in the baking pan.
- You can now place the baking pan in the over at 300°F for 25 minuets. Once that's done, turn off the oven and leave the Meringue in the oven for an hour. The Meringues are ready when they no longer stick to the bottom of the pan.

How to make Meringue Kisses (Video)
Very often, I would find left-over egg whites lying around in my fridge (don’t ask why, I’m not sure either). Most of the time, I would turn them into macarons but today, I decided to make some meringue kisses out of them instead.
These pretty little drops of sugary crisp shells are so fun and adorable to look at. If you are not into pink and purple, feel free to experiment with different shades of colors. You could also leave it in its natural state of white and they’ll still taste as good.
Ingredients -
2 egg whites (approx. 65 g)
130 g caster sugar
¼ tsp vanilla extract (I’m using vanilla bean paste)
Food coloring gel (I’m using Wilton Icing Colors in pink, violet, sky blue)
Some vinegar
Makes about 25 meringue kisses

Makes about 70-80 cookies
Ingredients:
3 Large egg whites (100g)
1 cup (200g) Castor sugar
Pinch Salt
1/4 teaspoon Cream of tartar (optional)
Gel food coloring (optional)
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 200°F (100°C), line one or two baking sheets with parchment paper. Set aside.
2. Place the egg whites in a large, clean bowl or a bowl of a stand mixer. Add a pinch of salt and cream of tartar (optional). Beat egg whites until foamy, start by beating on low then increase to high speed, when the mixture is foamy, add the sugar very slowly one teaspoon at a time while continuing to beat.
3. Once all the sugar has been added, continue whisking on high speed and whisk until the meringue is glossy and very stiff.
4. Stir in vanilla extract or other flavoring (see recipe notes). At this stage you can add gel food coloring if desired.
5. Transfer the meringue to a piping bag fitted with a tip/nozzle of your choice. Or just cut the end of the piping bag and pipe without a tip. If you wish you can color your kisses by adding food coloring gel strips inside your pastry bag before filling (see the video).
6. Pipe the kisses onto the prepared trays. Squeeze lightly on the piping bag slowly pulling up before quickly lifting off to create the tip.
7. Place the tray on the center rack and bake for about an hour, then turn the oven off and keep closed for an additional 1-2 hours.

2 egg whites
2/3 cup sugar
1 tsp. cream of tartar
1 tsp. Vanilla extract
2/3 cup semisweet chocolate chips
2/3 cup chopped toasted walnuts
Beat egg whites until fluffy, add in the cream of tartar gradually. Add the vanilla and keep beating until you cannot feel sugar granules between your fingers and stiff peaks. Add in the chocolate chips and walnuts. Preheat oven to 350 degrees, place your cookies on a parchment paper lined cookie sheet into the oven and turn it off. Leave the door closed for 5 hours or overnight!

- First in a large bowl add your egg whites
- Then add in your sugar to the bowl
- Now mix everything together with a whisk until meringue forms
