How To make Lemon Meringue Kisses
2 large egg whites
room temperature
pinch salt 2/3 cup sugar :
sifted
1 teaspoon lemon zest -- finely grated
1/4 teaspoon vanilla extract
OVEN: 250
Cover 2 baking sheets with parchment or foil.
Beat egg whites with salt til soft peaks form. Add sugar very slowly, beating well between additions, til egg whites are stiff but not dry.
Fold in lemon zest and vanilla.
Drop by teaspoonfuls onto the baking sheets or pipe small kisses with a pastry bag fitted with a 1/2-inch star tip.
Bake til dry, but not brown, 40 to 45 minutes. Cool 2 to 3 minutes before removing from baking sheets.
(Can be stored up to 2 weeks in an airtight container.)

The circus is in town! Sort of. Well these little meringues remind me of clowns and big-tops so I thought I’d share them with you lot to brighten up your day. Super cute, colourful and fun and relatively easy to make (provided you have a long paint brush!). Get whisking!
RECIPE
4 egg whites (from free-range eggs at room temperature)
double the weight of your egg whites in Caster Sugar
a pinch of salt
a dash of vanilla extract
colour paste in various colours
(liquid food colouring isn't really suitable for these as it's weaker-coloured and difficult to use without drips)
colourful sprinkles

You can use 1/2 tsp of lemon juice or vinegar instead of cream of tartar.
Baking time : baking time is around 1 to 2 hours or some time it may take 2 and 1/2 hours as well. So, check after 1 hour, if they are baked then turn off the oven and let them cool completely in oven ... if they are still sticky and chewy continue baking for some more time.mine took more than 2 hours.
Baking temperature : 100 degrees Celsius (212 degrees Fahrenheit)
Ingredients :
Egg whites : 2 (room temperature)
Sugar : 1/2 cup/ 100 grams
Vanilla essence : 1 tea spoon
Cream of tartar : 1/4 tea spoon or 1/2 tea spoon of vinegar or lemon juice
Few drops of food colour
